The Zyliss Rotary Cheese Grater works quite well with hard cheeses, such as Parmigiano Reggiano and Romano. After I had used a rotary grater at a friend's house and had seen one used at table in an Italian restaurant, I decided to buy one for my kitchen. So I bought an all-stainless steel one from Italy. After using it once, I returned it because it made too much noise! I exchanged it for the Zyliss Rotary Cheese Grater. (Mine has two stainless steel drums--one for coarse grating and one for fine grating.) Since these two cheeses are so hard, I use a Wusthof cheese knife to cut off small thick slices for grating. Many times I ask a family member or a guest to do the grating while I am finishing the pasta. If you have a few small pieces of cheese prepared ahead of time, it is very easy to grate them at the last minute for use as a condiment to serve with your pasta dishes, (but never with the cream sauce pasta dishes, such as Fettucine Alfredo). I also use the rotary grater with these cheeses to add them to Minestrone. Since this grater has a stainless steel drum, I would wash it by hand so that it will stay sharp. Now I only use my flat or box stainless steel graters for cheese when I want to make sliced Parmesan curls as a garnish. A very durable product--highly recommended!

Dust some ground chocolate over cocoa or crepes, nuts over brownies, and, of course, fresh Parmesan over spaghetti. Just slip the steel drum inside the grater, hold on with one hand while twisting the handle on with the other, place the cheese or nuts into the 2-1/4-inch by 1-inch well, and grind as little or as much as you need.
