After seeing that it costs hundreds of dollars to get a set of knives sharpened by a "professional" and being too lazy to learn how to do it manually myself, I decided to give this a whirl. I figured, as long as it didn't ruin the knives, my wife would be happy. She used it once night after washing some knives, it only took a few minutes, put them away and then we went on vacation a few days later. After we returned, having forgotten that she had sharpened them, she was perplexed as to why the knives seemed quite a bit sharper than she remembered. It took her a few minutes to recall she had used this sharpener before we left. Granted we're not chefs, but you'll certainly notice the (positive) difference with your knives after using this sharpener.

While I have a great set of Henckels for home use, I bought this more to use on my work knives as a bartender. At work we have cheap generic knives that are highly abused.It took some time with the steel wheels to clean up the edge on the cheap knives, much more than "5 passes", but once I got the edge down and nicks out, the ceramics gave them terrific edge. Almost a month later the edges are holding up great despite heavy abuse and constant runs through the dishwasher (dishwashers take the edge off of knives - hand wash), since I have no control over the abuse my coworkers dish out. I am really looking forward to using these to clean up my personal knives out home, as soon as I get them out of storage. Highly recommended.
Customer Review: Awesome at honing / touching up an edge Summary: 5 Stars
To get a really first rate edge, I use a Lansky system with the guide rods and different angles. However, that is a pain for a quick touch up because it requires clamping the blade down and setting up the rods. This Henckel's model is awesome for touching up an edge or honing as it is also called. I do not use it for re-setting an edge or sharpening. The difference...honing is that last step that gets it really sharp. Sharpening can be thought of as re-setting an edge that has been really dulled. The carbide wheels are really supposed to sharpen, but I don't get very good results. The ceramic wheels are simply the best way I know to get a good quick hone.

After we received our sharpener, I came home at lunch a few days later and went to cut a tomato. The knife slid through the skin like it was a hot knife going through butter. I asked my husband if he had sharpened the knives and he said yes. He said it was really easy to use. All our knives are good quality Henckels so we were particular as to what sharpener we bought. We had originally looked at the Henckel one slot sharpener until I found this model. We were afraid an electric sharpener would widdle away the steel too much.
We would recommend this product if you are wanting something easy to use that works well.

This is a very simple, easy to use knife sharpener. Obviously you'll be much happier with your knives after some sharpening. And this puts a pretty good, decent edge onto your knives. But it's not a REALLY good edge. You can sharpen much better with a set of whetstones and a steel. But it's harder to do. I tend to use this sharpener to keep the knives in reasonable shape if I'm pressed for time, but on occasion put in some time and effort to sharpen them up properly. It's shocking how much better a well sharpened knife is in the kitchen. But a so-so sharpening is also way better than the dull knife in the drawer.
