Customer Review: A decent knife, but there are better options out there if you want ultimate sharpness

I have this knife as part of a 15 piece Pro-S set. There are a lot of positives to this knife, and taken in context of a German blade,... it performs quite well. First, it does not have a large bolster that extends down to the blade's edge. This makes sharpening MUCH easier and allows you to used th whole blade. The tip lets you do detail work well and I never use a paring knife anymore. The blade thickness is pretty constant over the entire blade (from the edge to to the spine) at about 2mm. Its not nearly as wedge shaped as Henckels Chef knives which tend to split hard vegies rather than cut them.

The edge is ground reasonably sharp from the factory, but its by no means a razor edge. A good diamond stone, paired with a ceramic or Japanese waterstones can put a much nicer edge than the factory one.

So why only 3 stars? First, the blade, while thin by German standards, is postively chunky when compared to Japanese knives. Not just Shun, but more specifically Japanese knives, from Japan which have blades that are just as stiff, but literally a fraction of the thickness near the edge. This translates into superior cutting and less force needed.

Second, this knife does not hold an edge for very long. I can get a shaving sharp edge on the knife, but it won't keep it for longer than a few weeks. Even when wiping dry the blade after each use and hand washing only, the edge just won't hold

Thrid, its just not quite long enough. Its fine for chopping most thing, but long veggies, and meat require a sawing action or two cuts which is not ideal.

Lastly, the granton scallops are useless. Other reviewers state that food does not stick to their blades. They alwasy stick to mine.

In all, you could do a lot worse, but quality japanese knives can cut circles around the Heckels Santoku. If you are buying a single knife and are looking at this blade, do yourself a favor and look at some Tojiro DP knives or Hiromoto knives and you will never ever look back... and all your friends, neighbors, and family's knive will feel like cheap butter knives from that point on.

The Japanese version of the chef?s knife, the santoku is useful for straight chopping, mincing, and slicing of larger quantities of vegetables and meat. Cooks with smaller hands may prefer this 7-inch blade as the shorter length offers better control while cutting. The width also provides a great platform for transporting chopped vegetables from cutting board to sauté pan. This version of the santoku actually has a hollow edge or oval cut-outs along the blade. The benefit to this blade style is that cooks can cut paper-thin slices and individual slices won?t stick to the blade.

Part of the Pro S series of cutlery, this knife has a fully forged high-carbon stainless-steel blade. The blade, bolster, and tang are welded of one piece of metal using Henckels?s Sinter Metal Component Technology, which distributes the right quantities of metal to each part of the knife. The result is a longer-lasting edge and a more consistent angle on the blade. The blade has also undergone Henckels?s Friodur ice-hardening process, which further strengthens it and protects it from discoloration.
