Kitchen and Housewares Reviews of Wusthof Culinar 8-Inch Carving KnifeCustomer Review: Good Knife, Few Uses Summary: 3 Stars
There are really two main competitors in the high-end mainstream kitchen knife market: Henckels and Wusthof. Those who have used both usually have a preference. My preference (and therefore bias you should know about) is for the Wusthofs. The Wusthof Culinar line is an all stainless steel look, rather than a black handle. Although the picture and some descriptions want you to think this is a single piece knife, be advised that the hand is a separate piece of stainless steel molded onto the tang. I personally prefer the handle of the Grand Prix and Classic, because the grip is surer for me, but this is, to some extent, a matter of personal preference. This series "looks" more professional to some (like a Viking stove). This particular model, the 8 inch carving knife, is a good knife, but I find its uses to be few. For chopping, the chef's knife or utility knife are more useful. This knife is too long and thin for chopping; its balance isn't right. Therefore, this knife is really limited to carving meats. For most cooks, this is an expensive knife for a rare job. If you are completing your collection, I recommend this knife. If you are starting a collection and looking for an all-purpose knife, I would recommend the 8 inch chef's knife or the 4 ½ inch utility knife.
Description of Wusthof Culinar 8-Inch Carving KnifeWushtof%27s 4529%2F20 Culinar 8 inch carving knife features a long blade for easily carving thin pieces of roasts%2C ham%2C or fowl%2E Elegant satin-finish handles sculpted from 18/10 stainless steel distinguish Culinar knives from Wüsthof's other cutlery lines. Otherwise Culinar knives embody all the virtues of other Wüsthof knives that have earned the German manufacturer world renown. The principal parts of a Wüsthof knife--blade, bolster, and tang--are forged from a single piece of high-carbon stainless steel, and the blade is precisely tapered from bolster to tip and from back to hand-honed edge. Blades and beautifully formed bolsters are not as thick as some knives'. As a result, despite their heft, strength, and durability, Wüsthof knives are pleasingly delicate and marvelously balanced in action. With its long, narrow blade, this 8-inch carving knife neatly slices a roast, ham, or turkey into serving portions. Like all fine knives, this carving knife should be hand washed. --Fred Brack
