The Wusthoff Classic steak knives are very well designed. One portion of their design that I love is that the blade is not serrated. So many cheaper knives use serrations to keep the knife sharp, but serrations tend to rip through meat instead of properly slicing through it. Serrations can also make a knife harder to clean by hand, especialy if they are aggressive serrations. The previous brand I had was designed with such aggressive serrations on the steak knives that my wash rag and drying towel would get caught up on them and rip. The Wusthoff steak knives are very sharp and appear to be made out of a very high quality steel. Other knives I've had (even expensive German steel ones) have had the tendency to get little rust spots. These knives show no signs at all of those little rust spots developing.
Another good aspect that I like about these knives is that they don't use wood handles. Wood handled knives you have to make sure that the handle doesn't get wet or it gets discolored or can start coming apart and the wood can trap bacteria, etc. The handles of these knives can be fully immersed in water and easily cleaned. The handle is tightly fitted and ground to the same curvature as the metal for no gaps. And the bolster on the knife prevents any liquid from wicking up between the handle and blade through capillary action.
One thing I think people often forget about is whether their knife design will be around several years from now. The Wusthoff Classic series has been around for years and should be around for years to come with little change to the design. So if you want to add a new knife to your block or collection 5 years from now or 20 years from now you can bet that the Wusthoff Classic line will still exhist and will still closely match the knives you already have in your set.
This is a knife set that will not wear out or break and that I think can be passed down inside the family for generations. And if the kids or grandkids accidentally lose one or want to add to the set, Wusthoff will still be selling knives that match them.
I think Wusthoff has put a lot of thought into their designs. For example, their kitchen shears are designed to easily come apart for easy cleaning, being able to clean between the blades, and easy sharpening. Yet even though the shears are designed to come apart, it doesn't make them any harder to cut with.
I wish more companies thought their designs through so thoroughly. We all hate to pay a lot for something. But if you like to cook, a good knife set is essential and worth every penny.
