There's a recipe I do that requires me to butterfly a chicken - essentially cutting out the backbone. I've done it with cheaper German-made kitchen shears and it actually broke in my hand. This Wüsthof is a must have for this recipe - it works very well. And the clean up is really easy: just take it apart and wash. They are all that they were heralded to be. They are excellent
cutting edges and appear to be durable so as to hold that edge
despite cutting some daunting materials like chicken bones. The
Come-A-Part aspect is accomplished easily and makes cleaning a snap.

I have used these shears for about a month and they are great. They are very sharp and have easily cut through everything I've tried them on, including some very tough plastic packaging material that would challange an ax. I have not yet tried them on chicken bones but, judging from past performance, they should handle that chore with ease. Highly reccomended.Customer Review: best kitchen scissors; but, watch for RUST

These are essential shears. Scissors that do not come apart are not good for food; because, the food gets stuck and rots. These scissors come apart when you fully open them; and, they clean VERY easily. [...].
Followup: After washing in dishwasher; these rust. I bought some kitchenaid scissors [...] for a tenth of the price that do not rust.
