I'd never used poultry shears before so I could only compare these with using a knife to cut up my chickens. These were WAY better than knives. I cut up eight chickens, and the scissors cut through skin and muscle and tendons easily. Cutting up through the chicken breast was a little harder, but when I did it in two layers- first through the muscle and then through the cartilage, it worked much better. The scissors never came apart until I wanted them to, and then of course they were very easy to clean.Customer Review: Unhappy with same feature others love.

I read a lot of reviews before I purchased these shears. The thing that was mentioned over and over again was how easy they came apart for cleaning. What they didn't say is the the shear come apart constantly when you're using them. For example: I was cutting an uncooked chicken apart and the shears opened (fell apart) 7 times. It was very aggravating. The plus size of the shears is that they ARE very sharp and should be easy to keep sharpened. I've opted to buy a different brand and style.Customer Review: In love

I don't think these shears cut things, I think they wish things apart. Cutting with them is a joy unparalleled by any other scissor cutting I have ever done. These cut effortlessly through everything.
To be honest, I got these because of the brand, but now that I have them, I'm raving to everyone. The quality is great. My husband thought he "broke" the shears, but it was actually a delightful discovery that they come apart for easy cleaning. I think I actually did a happy dance.

Let me start by saying I am not a Wusthof snob. But I got these as part of a set for Christmas. Fantastic scissors for $20 Sharp easy to clean and also very cool with the double knife separation. They will do in a pinch.
This pair is fantastic makes prepping ribs, chicken, vegetables a breeze. Really like them. And they are great for any cutting needs. I do not have kitchen shears and then office shears and then general. I have one pair and this is it.

Friends had seen me using kitchen scissors and were surprised that I even had one! I told them I'd buy one for their anniversary (the couple that cooks together...). The price is great for such nice scissors, so I bought an extra for myself (the one I have doesn't come apart, and I've always worried a bit about the cleanliness factor). Great grippage, good quality -- these are so useful (much more so than the single-purpose curved blades for poultry). I'm REALLY pleased.
