These shears are indispensable. First they are sharp and stay that way---definitely not to be used by children. They will definitely bone a chicken all by themselves (but I spare mine a little by using poultry shears to cut heavier bone).Easy to handle. But best of all, they come apart and go back together with extreme ease, yet stay together for use. Contrary to the description, it is not necessary to use the cap and screw to get them apart. They are well designed with a slot and protrusion arrangement that allow them to be separated for CLEANING with a single motion and to be rejoined the same way. The cap and screw are only necessary for sharpening. You'll wonder how you ever got along without them.Customer Review: Shear delight

(Before anyone discounts my critique for poor spelling, pun was intended.) My Wusthof scissors were included in a set I bought on Amazon and seemed to be a nice inclusion I didn't really need. I find now, though, that I use them almost daily. They are solidly constructed, as sharp as my knives and retain their edge by honing as I do the knives. Being able to unhook the two sides so easily makes both honing and cleaning very simple. Cutting a chicken into pieces either to cook or serve a purchased rotisserie is effortless. I highly recommend Wusthof products from my use of them for several years and think at this price these shears are a screaming bargain and a must have.Customer Review: Worth the money

Not that these were terribly expensive at about $20, BUT the quality for value is high. They cut beautifully.
I replaced a $10 pair of shears whose plastic handles had snapped off after about 6 years.
These are far better than the ones they're replacing and I DO like that they come apart, which makes for easy sharpening as well.
Unless you are trying to trim the top off a watermelon, it's unlikely these will accidentally come apart while using them. Each time they go in the dishwasher it's a very deliberate process on my part to separate them.
Would highly recommend.

I have a pair of these I've had for years; and, I've always put them in the dishwasher. Being able to take these shears apart and put them in the dishwasher is there best feature. I know the "experts" say that knives and shears should not be put in the dishwasher, in order to keep the blades sharp. However, I'm not cutting chicken bones. I use mine to cut open frozen food packs, cut up pizza, cut up cooked and raw meat, etc. These shears have always been "scarry sharp!" Very high quality shears, and very easy to clean because the blades can be separated from each other.
We keep them in a drawer in the kitchen and usually just pull them out when something needs a quick snip. As silly as this sounds, I use other (cheaper) scissors more often because these are "the good ones" and I don't want to mess them up cutting just anything.
Zero complaints, and a worthwhile purchase. They would make an excellent gift as well. (I gave them to my wife a couple years ago, and she was happy with them.)
