I have a pair of J.A. Henckels Twinshear Kitchen Shears that I use for everything, but the blades cannot be taken apart and the joint is hard to clean. So when I need another pair of shears for cutting up baby/toddler food, I decided to get another pair reserved specially for cooked food.
This pair is really worth every single penny. The blades are very sharp, and the handling is great. One blade is serrated on the top, so food does not slip as easily. It fits perfectly in my hands (my hand is on the large side for females, but definitely smaller than an average male's). The best part is that it comes apart for cleaning very, very easily. I only need to open the blades all the way to 90 degrees and pull them apart. There is no knob or any other parts other than the blades, so there is no loose part to lose. The precise machining makes the shears feel sturdy when cutting - the blades do not shift around in other directions at all, unlike many other come-apart models - but they come apart (and go back together) in a snap.
I highly recommend this product to anyone looking for a new pair of shears. I am even thinking of replacing my other pair, only if I can find a way to tell the two apart...

I bought these Wusthof shears from Amazon and have not been pleased with them. I have small hands and it is very hard for me to open and close the shears enough to cut though a chicken breast. It is uncomfortable and feels like the blades are too stiff. I am not sure how to adjust the tension, if there is a way to help them open more smoothly. ALSO, the ergonomics are such that the top and bottom handle are identical (perhaps to match left and right-handed persons), so it's hard to feel like they fit nicely into the hand. Imagine a baseball glove without finger sectioning. Yes, you can use it, but it doesn't accentuate the natural shape of the hand. The scissors are not poor quality, but they fit poorly in my hand. Perhaps it is my small hands?? I wear 4.5 to 5 size ring, and my hands are less than 7 inches from wrist to middle finger tip, to give you a frame of reference. My advice is try before you buy. I was 'upgrading' from Fiskars orange kitchen shears that also take apart. I wanted the black name-brand shears here to match my new knives. BUT guess who puts down the Wusthof and reaches for the Fiskars? :) Hope this helps someone...Customer Review: Wonderfully made. The last knives you'll ever need!

This is the one that gets the most beating in my cutlery set. I've been using it for about 2 months. I use it to cut butcher's twine, fruit netting, open beer bottles, most everything. I even use it to cut through chicken wing joints, ribs, trim fat off meat, and it'll still glide through paper like the first day I bought it. I love that it comes apart. No more trying to scrub out food that's been stuck on the screw, which is very hygienic. It's sturdy and has a nice weight to it. Even opening and closing with your hand feels like you are in control. The shears do not slip or need heavy pressing to get it to work. It's glides. The material feels wonderfully smooth on your hand. Although, my mom was the first to notice that it does say it's made in china in very small gray lettering. But it doesn't matter! Who cares? I didn't even noticed until she said it. You definitely will not get poor craftsmanship. This screams sharpness and Wusthof engineering at it's best. They stood by this one. Bravo! I recently purchased these when my last set of poultry shears broke at the joint. These had a decently high rating and were available for the 4-for-3 deal so I grabbed a pair.
So far they've been great. The take-apart design makes them easier to clean and less likely to break as they have a way of failing safely built into them. They are also significantly sharper than any of the previous kitchen shears I've owned, which has included some much more expensive products.
These seem a little pricey at first, but they're high quality, easily cleaned, and tougher than the average scissors. If they're on sale and you need another item to add to get the 4-3 promotion they're definately worth it. They're still just shears though, so if your current ones work fine then it might be best to wait till those wear out to replace them. After all, it doesn't make sense to buy something simply because it lasts longer when what you have still works fine does it?

I didn't know I needed kitchen shears until after I had owned them a while- things I used to do (dangerously!) with a knife, I now use these shears for. Who knew? Well, apparently the wife did when she put these on our wedding registry!

Very true, and they come apart easily. You don't have to wrestle with them at all- and, better yet, when you put them back together they line up true- there is no wobblyness at all.
2. Can be held with either right or left hand
I'm left handed and love this feature. often, when something claims to be lefty/righty, it's a dirty lie. Not this time! I didn't even think about it until I read it here, that they worked lefty/righty.
