My professional background has been in the hospitality service industries for more than 20 years coming up through the ranks of food and beverage. I was a line dinner cook at the ager of 17.
I have been putting this off this addition to my cutlery for too long. It does a fabulous job of fine slicing and dicing for smaller needs not requiring heavy prep. work. I am impressed on how sharp it is - WOW! This is a small light knife, that's very well balanced and feels great in the hand.

I`ve been a J.A. Henckels knife proponent for years and own about 20, including 8 steak knives, and still love them all, but this has become my favorite knife. It is versatile and sharp. This meets two of the three really important issues in a knife, the third (in my mind) really important issue is: PRICE. This knife is a little pricey. But since it has become my main knife for dicing, slicing and almost everything else, it now seems almost cheap.
Update....Bought a second one for my mom.

...and I don't even play one on TV. As an ordinary everyday-type cook, I value this knife second only to my 8" chef's knife. The chef's knife remains the workhorse of my kitchen, but if I need a really fine mince or a very precise julienne, I grab the Santoku because it is easier to exercise very fine control in my unskilled hands. If your cooking is basic meat and potatoes, this knife may be overkill; but if you ever get that adventurous spirit and play around in the kitchen, you want it.

I love to cook and have been doing so with a knife set I've had for years...I finally decided to get one good knife and this one is it! I had no idea cutting things was so easy! It is a good size for me (I am 5'10) as it is not too small for my hands or too big either. It literally falls thru the veggies and meat too- a good all around knife. If you can only afford one knife, this one would be a good choice. Don't deny yourself any longer- the price is worth it.

My boyfriend had been drooling over this knife for months, so I bought if for him for Valentine's day. He was super excited and said it is the sharpest knife he has ever seen. I watched him cut through a squash like it was butter instead of struggling and wiggling the knife through it as he used to with our cheap walmart knives. It is so sharp I am afraid to use it (I am clumsy)! We will definitely be buying more wusthof knives in the future.
