After drawing the knife through the sharpener several times I felt it was not really doing anything. But after about ten times with even and constant pressure. ( Not to hard just firm.) I Sliced and onion and it flowed through like butter. It worked just great. Do remember to only use the rough side when the knife is in bad shape. And just the smoother side when you just need to put the sharp edge back on. Also be sure to hold the knife at the correct angle. If you hold it wrong it will actually dull the edge.
I am very pleased with this sharpener and would recommend it to anyone.

I'm always looking for quality tools at great prices and this is one of those. It's easy to use, stable and sharpens well. The dual function (for knives and scissors) is great.
My only user suggestion is that when you sharpen your knives, have a cutting board or a wood board under the sharpener when you use it to protect your countertops. When you pull back through the sharpener with the knife, the tendency is to hit the counter or table with the tip of your knife because you are pulling and applying downward pressure at the same time.

I bought one of these for a friend for Christmas, based on the reviews that I had read on Amazon. I had used some of her knives at various times and they were very dull and terrible to use. She told me she was going to send them out for professinal sharpening, which would have cost significant dollars. After I gave her the sharpener, I decided to use it to sharpen some of her knives. I sharpened about 15 knives in about five minutes. This thing really works! It's easy to use, sets a nice, sharp edge. I am getting one of these for myself! Wusthof Two Stage knife sharpener arrived promptly and well packaged when ordered through Amazon. Our old electric sharpener was inconvenient and the knife blade guides shifted so it no longer kept the correct bevel on the blade edge. The Wusthof is easy to store and use. The first stage got a good bevel on a variety of knives ranging from stainless steel Henckels to carbon steel blades. The second stage used once a day keeps the blades nicely honed.
