So for the holidays, I bought a new Wusthof 6" Chefs knife.. My last knife purchase was probably 5 years ago.. I was amazed and shocked how sharp the knife was.. I guess I'm not very good with the sharpening steel.. :(
Reading the reviews here, I decided to give it a try.. It literally brought my 11 year old Wusthof knives back to life! I thought they were sharp before sharpening.. Boy was I wrong! My old knives are "almost" as sharp as the new one after using this sharpener. Sharp enough (I can cut paper thin slices of garlic). The one thing to note is you have to put some pressure on the knife while sharpening..
There are two sections for sharpening, one that is coarse for dull knives, and one that is fine for "touch ups" on already sharp knives.. I actually ran my knives through the coarse side several times, and then ran it through the fine several times.. :)
I have not tried, and probably will not, sharpening my serrated knives.. I think they require a special sharpener..
Customer Review: Use a jeweler's loupe to examine your edges, Summary: 5 Stars
First of all, this is the cheapest and easiest way I have found to keep all of my kitchen knives sharp. But I have a somewhat advanced method of determining the quality of sharpness of my blades. I have an inexpensive jeweler's loupe (under $10), which I use to examine my knife edges as I sharpen them. This helps me determine what is causing ragged and irregular edges. The Wusthof sharpener is pretty basic; it doesn't need instructions. You simply need to pay attention to how your blade feels as you pull it through the course trench. I noticed on two of my blades that there are microscopic scallops, which can be seen under magnification through a loupe - these are under 1mm. This could have been from poor technique from other sharpening systems, because of the distance between the left and right sharpening surfaces. I think the more force you put on your blade in the coarse trench, the more likely you will damage your blade with these microscopic scalloping.

This is a very useful product. Had used a classic sharpening steel (rod) for years. There are several advantages to this product. It lies flat on a counter, and has non-stick pads so that it lies securely, doesn't slide while you are using it. That is a convenience as well as a safety feature. There are three sharpening features: one for coarse work (e.g. repair a nick in a blade); one that is ceramic (for honing a blade that is already in good shape, as well as for some knives that ONLY should be sharpened with a ceramic system[e.g. molybdenum alloy blades]) and one for scissors. The scissors feature may or may not be very useful - depending on the type and size of scissors. Should be fine for standard kitchen shears. I have had this for just a couple of weeks, but am very satisfied with the ease of use and the quality of the sharpening. It is a simple, useful design, and will hopefully prove durable as well.

This product is just amazing! I have top quality knives, but have never been able to get them properly sharpened with a steel. After reading the reviews, I figured the Wustof sharpener was worth a try. Because it has no directions, I struggled a bit at first. It seemed like I was holding the knife perpendicular when I actually was not, but after some trial and error I got it right (you should hear a grinding sound and see bits of steel flaking off). I used the coarse part just once since my knives were really dull, but ever since, I have only needed to touch them up with the fine slot. I generally run my knives through maybe 6 or 7 times each time I use them to keep the edge perfect. Honestly, my knives are even better now than when they were brand new. This sharpener has enabled me to slice through tomatoes or anything else like butter. Best 20 bucks I ever spent!!

While sharpening the first knife on this, one of the ceramic rods began to rotate. By the second knife it was really spinning around, and squeaking. I don't think this is supposed to happen - for one, it would asymmetrically hone the blade. But I don't know for sure, because Wüsthof didn't reply to my email question about it.
Well, that problem could be fixed with a bit of superglue. But I really shouldn't have to repair things right out of the box. And something with no moving parts (ignoring the floating rod in the scissor sharpener) should be easily made solid.
On the other hand, it seems to work now. My (previously incredibly dull) knives have a new lease on life, and seem moderately sharp. I haven't extensively used any other sharpener (my knives can attest to that), so I don't know how it compares.
