I have gone through 6-7 sharpening products in the last 5 yrs, searching for the holy grail. They included diamond and ceramic rods, diamond pads, the Chefs Coice Pro 3 stage electric, and a few others. Two years ago, I ended up with what may be the best system for putting a seriously sharpe edge for all my knives (mostly Henckels), the EdgePro Apex. It cost me a bit over $200, makes the best edge I have ever seen, but is very time consuming and a bit messy (multiple wet stones). I only sharpen my knives every 2-3 mos because it takes me 2 hrs to do them all.
I bought this Wusthof sharpener in Jul 2010 to help extend the time between sharpenings with the EdgePro. I first sharpened my knives on the EdgePro to the angle the Wusthof makes. Now I just run each knife across the ceramic rods portion of the Wusthof each time I put a knife back in the drawer. So far, this has kept a razor sharp edge on every knife and I haven't had to pull out the EdgePro in 8 mos! This little sharpener has exceeded my expectations.
If I had found this first I would not have invested in the EdgePro.

I have been using honing stone and I am also proud for being able to sharpen all my knives with the stone (except for the serrated ones). Then I gave this thing a try and wow ! it works, consistently and with ease. When using a honing stone, it is hard to maintain the correct edge angle, and this device takes the guess work out. A friend of mine thinks his buck knife is sharp until he reset the edge with Wustof's stage 1 carbide edger and then hone it with the stage 2 ceramic sharpener. Then he was surprised with how his "new" knife shred paper like razor. Then we tried with the scissors and learned that the specially shaped slot should prevent one from inserting the scissors in a wrong way (right handed vs. left handed scissors). Quality is great. Comes with non-slip padding on the grip as well as several other sides so you can grip it and hold in down on the counter top in several positions/ways steadily.
Downside is that it is a bit pricey. There are cheaper ones out there which I believe would work similarly but would probably lack the little quality touches here and there.

La verdad es que lo compre con un poco de dudas ya que siempre había utilizado la piedra de amolar, pero en realidad nunca había tenido unos cuchillos tan caros y particulares como estos.
Cuando compre mis 2 Wusthof olvide que en algún momento perdería el filo y así fue como sucedió.
La impresión que me dieron cuando los compre se fue desvaneciendo al pasar de varias semanas cuando empiezas a ver como dejan de cortar también como cuando los usas por primera vez. Ojo, cuando pierden el filo siguen cortando mas que un cuchillo barato, pero ya tus exigencias han subido y no te conformas con un SEMI-SUPER-AFILADO.
Por ser tan caras las piedras me decidí por este amolador y ya amole mis dos cuchillos, uno de 8" y otro de 4 1/2" y volvieron a ser los que eran en un principio.
El amolador es muy sencillo de usar aunque puede emitir sonidos que dan "dentera". Tiene unas gomas que permiten mas agarre de la mesada.
La verdad fue una buena compra y ahora tengo mas justificativos para seguir comprando mas cuchillos.

I ordered this Monday and received it Wednesday. Loved the packaging; though a plastic package, it wasn't heat-sealed in every conceivable manner so it was very easy to open.
That said, I have a small collection of Sabatier knives that I've simply used a steel on for the past few years. I know that the edges aren't what they should/could be so I bought this sharpener to see what it would do.
It's comfortable, easy to use, and effective. I first sharpened my 12" slicer, drawing it gently over the carbide side. I was surprised to FEEL the burrs on the blade!
I think that the key is to draw the blade from heel to tip slowly through the carbide sharpener with very slight pressure and repeating this until it feels smooth, no burrs. Then take it to the ceramic side for a final touch. That gave me a very nice edge.
Most likely I'll just draw my knives through the ceramic side from time to time unless I see a deterioration of the edge at which time I'll repeat the 2-step process.
I'm happy! A sharp blade is a safe blade!

All I can say is that the product does what it is supposed to do, and well.
Picked the sharpener up at the mall kitchen store, the Amazon price is about $2 cheaper than their retail. Brought it home, popped it out of the consumer friendly packaging, read the panel of instructions and went to it. My block of knives is as sharp or sharper than they have ever been. They're just typical WallyWorld knives, nothing special, but not the cheapest either. We do have one nice stainless monster that we bought from a friend's restaurant supply store that is scary sharp (at least it used to be).
After a dozen passes across the carbide blades you could see a little pile of metal shavings, this thing was working that edge right now. Switch to the ceramic touch up slot and they were as sharp as I'd ever want a knife to be. I even used the scissor slot and was actually surprised at how well they cut today. I'd forgotten about the sharpening yesterday and was actually caught off guard at how well they snipped through a FedEx bag today.
Good purchase.
