Customer Review: Terrific Sharpener.....The Best At The Price

I purchased this sharpener just recently, even though I have a fine hand held sharpener from Amazon that I left a really good review for. I decided to buy this one for I moved my hand held model to an outdoor barbecue area, and decided buy something a little more expensive for the kitchen. I have to agree with the other reviewers here that this Wusthof does an absolutely fantastic job of sharpening any knife, easily and quickly. Its design with the handle makes it very comfortable to hold and use, and just a couple of drags with the blade straight across is enough to get the knifes edge sharp enough to shave with. The ceramic rods on the fine side making any knife worth honing truly dangerously sharp. At first I didn't think the fine edge ceramic was really doing all that much. Unlike the regular carbide side where you can feel the grinding of the steel, the ceramic side is made up of rods, not a flat stone which allows the knife to drag over them effortlessly. The fine edge is derived from the ceramic being very smooth, but harder than the steel itself, truly giving you an edge that can only be made perhaps sharper by wet stoning. As much as I am impressed by my hand held sharpener, I have to admit that I have never felt knives sharper than what this Wusthof can manage. I am spoiled by this baby and highly recommend it. You won't find a better performing sharpener for the price. Truly super.....

Customer Review: NOT for Special-Edged Blades

With most Wusthof 'Scalloped' blades, Amazon shows them as "Frequently Bought With" this sharpener. If that's so, there are a lot of wrecked, expensive knives out there as this should never be used for any 'non-standard' edge!
I think Wusthof does have a [costly] grey, metal-bodied sharpener of similar appearance which WILL handle their "Bread" & "Tomato" knives, etc.
However, Their overseas employees appear to feel so exalted by the Wusthof [old] reputation that they no longer deign to answer E-Mail quiries. [This seems a common symptom of USA employees of 'hi-class' German firms.]
My sharpener worked like a charm for the 1st 2 months yielding razor sharp blades. But now, after 5 months total usage, the edge comes out barely acceptable - the Chineese carbide sharpening 'plates' are clearly wearing out which was bound to happen eventually but in no event should happen so soon - $20 wasted!

!!/2/09 While no 'Official' acknowledgments seem to have been made by Wusthof that the sharpening plate angles are correct ONLY for standard blades {note: I just assumed the plates are carbide}, I now see that this unit's been reduced [for clearance?] & that Amazon's now offering the hard-to-find Grey $50 unit mentioned above. In addition to being designed for both regular and [some?] special blades, it replaces the metal sharpening plates with modern materials.

Customer Review: BE CAREFUL!!...make sure your knives are strong enough.

When I first discovered this sharpener I was thrilled. I found it so much easier than trying to get the right angle with a straight sharpening steel, and faster than using my Lansky sharpening kit. However, I realized after several months of use that it was actually making my knives more dull. The problem was that the steel my knife set was made from was not strong enough. This sharpener actually "ripped", if you will, very small fragments of steel from the knife edge. Under a magnifying glass I could see many small divets along the knife edge. I realized this because the knives that I sharpened more often (used more) were in worse shape than those I haven't sparpened as much. Now I admit I don't have an awesome set of knives (still they weren't necessarily cheap). I had no idea though that this sharpener would render them unusable without a professional sharpening.

I'm sure, with the higher quality set of knives, and stronger steel, such as wusthof, this sharpener would work fine. If, or hopefully when, I start my wusthof collection, I do plan to try this sharpener again. If it proves to work then, I will change my rating.

This portable and handy sharpener has proven to be a very wise choice. We have several Wusthof knives and need to keep them sharp but were concerned about possibly ruining expensive knives with a small, inexpensive sharpener. The reviews were mixed but mostly positive so we purchased it and decided to try it out on some of our very old, 30+ years Flint knives that I have sharpened on an electric sharpener for years. Well, I took out a slicing knife used for cutting meat or poultry that needed sharpening and I pulled it 3 times through the Wusthof sharpener. I then cut some chicken and could not believe the results. The blade was sharper than it had ever been and was even sharper than when I sharpened this knive on my Chef's Choice electric sharpener. And it took less than 2 minutes to do this. I then felt confident to sharpen my Wusthoh knives and have not regretted doing so. This is a handy, very portable, take anywhere sharpener that fits conveniently in a cabinet or drawer. No electricity is needed and it is very simple and easy to use. I highly recommend this sharpener if you own good knives and want to keep them sharp.

This is and BEST knife sharpener I have ever used. My husband is a chef and he sharpens all our professional knives including our wustof knives with stones. But Iget tired of waiting to have my knives at home sharpened so I finally bought this WUSTOF sharpener as the other very good sharpener was not that great. WELL----I sharpened EVERY knife we owned in minutes to a razor sharp edge. Then I took all our cheap crappy scissors that were horrible and used the scissor sharpening portion and OH MY GOSH!!!! Even the WORST most horrible old pair that my children had ruined years ago were sharp and cutting with ease. Then I went in and we were using a Box knife to cut out and remove the carpet from a room. Well the blade was dull on 1 long cut thru the carpet and I really needed to change the blade. BUT I ran it thru the WUSTOF sharpener and it was so sharp I was able to cut the carpet again. I did have to sharpen the blade several times but everytime I sharpened it the edge worked again for another while when getting carpet out of our house.
I HIGHLY RECOMMEND THIS WUSTOFF SHARPENER IT IS WELL WORTH THE $20!!!
