Customer Review: Poor Quality Control - Smells Terrible When Used in Baking

In May 2010 I purchased this mat along with a Matfer Exopat in order to compare them to my aging Silpat before ordering more. I wish I would have saved the label since this came from an incorrectly mixed batch of silicone. The mat I received is outgassing in a 350 degree oven and it smells terrible, like melting plastics (it should be fine up to 500F) The new Matfer had no odor when being used, nor did my Silpat when new. As further evidence of the incorrect mix/poor quality, this mat was stained from chocolate chips in the cookies. I had no discoloration issues with the other silicone mats when the same batch of cookies was baked. Unfortunately, since its a used product, I can't return this-- so into the trash it goes.

I strongly recommend that you spend the extra few dollars and get the Matfer or Silpat mats, both appear to be identical and both are made in France. If you really don't want to get one of the better mats, then at least wait a few months and hope that the bad batch of "World Cuisine" mats have already moved out of inventory.

I've looked through all the reviews (on amazon) for this product and found only one that mentioned a concern of mine. I noticed an unusual smell coming from the oven several minutes after I first placed the baking mat inside. It smelled of something akin to melting (or burning) rubber/plastic. I waited a few minutes to see if it would go away but it didn't. Being precautious, I wound up taking it out of the oven. I also noticed that the thick black trim was very hot to the touch, and the smell seemed to be coming from the trim, not the white center. I wish the manufacturer would mention something about this in the product description, perhaps what material is used for the black trim. Anyway, I'm still uncertain about using this baking mat. Does anyone know if this is normal for the first use? (it makes me think about the way a new toaster gives off a weird smell for the first few uses) I'd greatly appreciate any comments from someone who can relate to my concern.

I really love these baking mats. They fit right down in my cookie sheets and baking a homemade pizza was no problem. I usually have to use parchment paper, but this will cut down on buying that item.

I also used these mats for my annual chocolate dipping. Instead of wax paper, I lined cookie sheets with the mats and put my hand dipped chocolates there to harden. When I popped them off, they had a neat "checkerboard" design on the bottoms from the mat.

Drawbacks: I'm not crazy about the black border around the edge. Also, when I cut through a hard piece of crust, the pizza cutter scored the baking mat a little. This doesn't affect the usage of the mat, but it's advertised as "can't be cut." What they really mean is the woven fiberglass inside can't be cut, the silicon, however, is vulnerable...

Let me start off by saying I was skeptical of how this item would perform. Never used a baking mat before, but let me tell you we are a believer now. My wife bakes a LOT of cookies for Christmas, so I picked up several of these after reading other reviews. Well, after baking about 30 dozen cookies these mats performed wonderfully. All the cookies baked evenly and even the stickiest cookies (the Carmel Turtle Cookies) just slid right off.

My wife was really happy with the performance. Clean up was easy, just rinse and wipe. We've noticed no difference in taste, no smell during baking, just perfect cookies.

I compared against several other mats that were more expensive (including Silpat) and went with this mat due to price (about 1/2 the cost of the others) and are very happy with our decision.

As a professional pastry chef, I have often used silicone baking mats and know what a useful item they can be. I also know how expensive they are. This mat offers the best of both worlds; great performance at an affordable price.

While these mats have their limitations (can't cut on them, some storage issues, discoloration) their usefulness far outweighs those minor details. On top of all the things they can do, you aren't adding to a landfill with parchment paper or foil every time you use them.

If you haven't used these mats, pick up one or two to use. Follow the instructions and you'll add a great tool to your cooking line-up. Not only are they wonderful for baking, if you make any type of candy, you'll find these quite handy.
