Kitchen and Housewares Reviews of Wilton 2105-5038 Giant Cupcake PanCustomer Review: Great pan, no problems Summary: 5 Stars
I greased and floured the pan, as I would have with any cake I've ever made, and it came out with no problems. I suspect those that had problems didn't grease + flour, or just didn't do it well. 2 boxed cake mixes made the giant cupcake and 20+ regular-sized cupcakes. I filled both sides ~ 2/3 full per the instructions that came with the cake, and as with normal cupcakes, it rose during baking and I ended up cutting off quite a bit of cake to make both sides flat. In fact, the bottom domed-up and looked so much like a large regular cupcake I wondered whether I needed to use the top cake at all... I had no problems with overbaking although I cooked both sided for the same amount of time, both came out perfectly.

OK - here was some helpful info I wish I had. Don't worry about baking one side, then the other. Who has the time to do that?? Make sure you saturate the pan (top, too) with cooking spray. (This is vital - I tried crisco on the sides and it failed) Simply fill the "top" side of the pan, leaving 1/4" of headspace. Then fill the "bottom" of the cupcake, leaving 1 1/4" of headspace. I baked for 50 minutes (oven temps vary) and then let it cool *completely*. (3+ hours) Because cake batter will spill over while baking, take a knife and gently tease the top part of the cake up. I also trimmed the top and bottom BEFORE turning it out of the pan! As long as you have sprayed the pan enough, it should slide right out!
Customer Review: I REALLY like this pan... Summary: 4 Stars
I've made a couple of cakes w/ it now ( posted pictures ) and love the finished product. Reading all the reviews first was the best thing I did-many helpful hints. I used a recipe suggestion for the cake that makes it a bit denser-but delicious-which helps in transporting. I also used Destini's instructions for making the cupcake "liners"--easy and turned out great! Thanks for all the suggestions.
Now, a question for people that have taken their cakes somewhere---what do you think is the best way to transport the cakes? I did toothpicks and plastic wrap but held on to it w/ one hand while driving as I was afraid it would slide all over and don't think that is the safest way!!!
Customer Review: Good idea; bad execution Summary: 2 Stars
This pan was a great idea, but unfortunately I don't think Wilton tested it properly. I concur that there are really no instructions to speak of. My cake came out a bit burned on the outside and undercooked in the middle. I would DEFINITELY advise against baking the top and bottom portions at the same time-the top part is so much smaller, it cooks up a lot faster than the bottom. If you have a metal core for the bottom, you should use it.
The finished cake is not as large as a regular 8- or 9-inch 2 layer cake, so if you're making this for a large party, you will need to either make 2 cakes or supplement with smaller cupcakes.
It is awfully cute when it's assembled though!
Customer Review: This is great and easy to use Summary: 5 Stars
I followed the advice of the other commenters and used my giant cupcake pan tonight for the first time. Sprayed pan with PAM for baking, measured 4 cups of batter for each side - cooked the bottom for 10 min and then added the batter for the top and baked for another 37min. It baked very nicely and I trimmed the top of the bottom and the bottom of the top and used frosting to put the 2 pieces together. For a non-baker I felt this was easy to use and curious how my co-workers will like it (I baked it for baby shower at work). I used 2 boxes of cake mix and it made one giant cupcake and 12 regular sized cupcakes. Oh to make it lower fat I substituted oil with unsweetened apple sauce.
