When your operation needs to cook a lot of food to be used at a later time, it?s vitally important that your fare is quickly cooled to prevent the growth and spread of potentially harmful bacteria. Victory?s 44? Reach-In Blast Chiller (VBC-100) can do that and more, as it is designed to reduce the temperature of a 2? thick, uncovered food pan from 160°F to 38°F in approximately 90 minutes. This blast chiller, which is constructed of heavy-gauge polished stainless steel, features a HACCP Data Logger System that records, stores, and prints temperature data for up to 7 days, in accordance with HACCP guidelines. It has multiple pre-programmed blast chill cycles and temperature displays, includes three food probes with digital temperature indication, and uses environmentally-friendly R-404a refrigerant. The unit can also double as a 38°F storage refrigerator in a pinch.
