Kitchen and Housewares Reviews of Victorinox Cutlery 8-Inch Carving Knife, Stiff Blade, Black Fibrox HandleCustomer Review: Very solid contributor in the kitchen Summary: 5 Stars
I purchased a block set of Victorinox about three years ago. Set included 4-inch paring; 6-inch boning; 8-inch chef's; 8-inch bread; 10-inch rounded slicer. They all have great blades and the fibrox handle which are quite good at being solid in the grip when handling fatty foods like a raw whole chicken or roast.
The knives come in three widths. The chefs is the thickest. The rounded slicer, bread, and boning knives are medium and a little 'flexy', as they should or need to be. The paring knife is quite thin and very flexy as it should be.
This 8" carving knife is the same width as the chef's knife, and having less overall mass, is the most 'solid' feeling of them all.
I weighed several of the knives for reference:
8" chef: 6.5 oz
10" rounded slicer: 4.8 oz
8" carving (this one): 5.0 oz
Each of the other knives is optimized for it's intent: chopping vegetables, boning a fish or chicken, slicing a roast, slicing bread, coring an apple. Each is great at it's function, but they can't really swap duties.
This knife is the Jack-Of-All-Trades. As a carver, it's fantastic. As I use it, it's a backup to all of my other knives duties, it's very, very useful to have on hand. It's now my first choice for working with chicken and vegetables. If you cook as I do, you have two people in the kitchen sharing duties, so it's great for that.
The overall design appears to have been redesigned. It's about 1/2 inch shorter than the rest of the handles, and there's an extra stamp on the blade.
Overall, the knives are excellent. Sharpen to a fine edge and hold it for weeks of household use. The handles can be properly sanitized in a dishwasher.
What's funny is that now that I know what I am looking for, I see the Victorinox knives at professionally-catered events all the time. If a roast is being carved at a conference, its a Victorinox. Fun.
This knife is a workhorse. Doesn't chop, bone, pare, or have the super-uber-flourish of the 10" rounded slicer at the Thanksgiving or Christmas table.
But it does it all with aplomb. If I had to pick one knife, it would be this one. And at $25 with Prime free shipping, I will likely get another one.
If you are considering one, it's a great knife.
I hope this is helpful. Have fun in the kitchen. Cheers
Description of Victorinox Cutlery 8-Inch Carving Knife, Stiff Blade, Black Fibrox HandleThe R H Forschner by Victorinox Carving Knife features high carbon, stainless steel blade, hand finished at Victorinox in Switzerland by skilled craftsmen. A special tempering process is used to produce an edge that can be resharpened over and over again, so the knife can keep its original sharpness throughout the entire life of the blade. Victorinox handles are ergonomically designed to minimize wrist tension. They provide a natural fit. A good heft and comfortable, positive grip are indications of a well-made knife. A sure-grip handle with a finger guard is valuable feature since the handle inevitably gets greasy, wet, or both. Although cutlery steel is naturally sanitary, materials and construction details of the handle minimize crevices what would offer hospitality to bacteria.
