Kitchen and Housewares Reviews of Victorinox 47547 10-1/4-Inch Wavy Bread Knife, Black Fibrox HandleCustomer Review: Any way you slice it, this is a great knife... Summary: 5 Stars
I'm so happy that I signed up as a member of the Cooks Illustrated site. They recommended this knife as a sensible alternative to another knife costing 3 times as much. I've been baking a lot of rustic breads lately, and sometimes the top of the loaf is, well...rustic so with a "regular" bread knife, cutting perfect slices is a challenge. Not with this knife. It's sharp, accurate and a pure joy to use. Dead on slices, as thin as you dare to cut them. Like another reviewer said, I wish I bought this knife 20 years ago! The best $25 bucks I've spent in a long time. Highly recommended.
Customer Review: the best I've used Summary: 5 Stars
Cook's Illustrated is not always right, but they are about this knife. It is better than knives costing 5 times as much. Excellent for bread, obviously, but also for slicing cakes into layers or any other serrated work. The knife does not last for ever. Mine broke after five years or so. I bought another one immediately. Given that it is almost impossible to sharpen a serrated knife perfectly, having to replace it after a few years is not a bad thing - just makes you even gladder you didn't spend a hundred bucks on one to match a fancy set that doesn't work as well.
Customer Review: Mediocre Slicing Knife Summary: 3 Stars
Just bought one of these thru Amazon and I'm a little disappointed. Tried it first on a loaf of homemade bread and it did a "pretty good" job - but not very much better than a 99 cent "bread slicer" from the Dollar Store.
So overnight I made some homemade Pastrami with a lot of "bark". The knife is much too flexible to allow thin cuts, and thick slices of Pastrami are not nearly as good, IMHO.
So what is this knife? A "Jack of All Trades" and "Master of None". Sorry if that offends, but I think this knife is both well made and poorly designed.
Customer Review: Excellent Knife Summary: 5 Stars
Excellent knife. Well balanced and exceptionally sharp. It cuts through hard bread and soft items easily.
People not used to handling large knives should consider the 8" version of this knife as it takes practice to hadle such a long cutting edge.
Although the blade is very thin and a bit flexible it's not flimsy.
I have owned a Forschner Fibrox handled chef's knife for years and it's my everyday knife. This bread knife is equal in quality and will become part of my standard tool kit.
Customer Review: Professional cook Summary: 4 Stars
I work in a restaurant kitchen where I prep the entire menu daily. I've used the Fibrox 10" chef knife for over a year and am very satisfied. The 10.25" bread knife is a recent purchase that I use for tomatoes, romaine, squash and other items that must be sliced in bulk. This is a very good knife at a great price - not so expensive that I worry about damaging the blade but sharp enough to get the job done. Only downside? Because this knife is ground on only one side, the blade tends to travel away from straight line cuts.
