Kitchen and Housewares Reviews of Victorinox 47547 10-1/4-Inch Wavy Bread Knife, Black Fibrox HandleCustomer Review: TOO sharp? Summary: 5 Stars
This is a great bread knife. I bought it because the bread knives that I had from block sets weren't long enough for one of the bread indexes (those things that have slots in them to cut uniform slices of bread, like the Norpro Bread Slicer with Crumb Catcher) that I use. I had switched to an index that I had gotten with an electric knife, which was narrow enough to accommodate the short knives.
When I got this knife, I continued to use the narrow index. BIG mistake! The narrow slots on this index made it easy to go a little off course and take a big chunk out of the plastic, and believe me, it went through it like you wouldn't believe.
This is typical of all the Victorinox knives that I have in my kitchen. I won't buy anything else from now on.
Customer Review: Best bread knife Summary: 5 Stars
This is the best bread knife among several I have used; I'm with a commercial bread manufacturing company and we use this at our plants and office. It cuts very well and can be used on other produce such as lemons, tomatoes etc.; you don't need to buy an additional 5" serrated knife to match your set...needless use of money that can be allocated to a good quality end grain cutting board.
A serrated knife cannot be sharpened except by a professional with the right equipment for which they will charge handsomely; the only people professing that a store-bought knife sharpener can sharpen serrated knives are those who want to sell you sharpening equipment. This is a small investment compared to an expensive German or Japanese bread/serrated knives...use this for a year, then when it becomes dull, toss it and buy a new one that is guaranteed to be sharp.
Customer Review: The best thing since sliced... Summary: 5 Stars
Never thought I'd gush over a knife, but this one is GREAT! It handles easily despite its length (large enough to top an 8 inch round cake) and the handle is comfortable with a nice "grippy" feel.
Space is at a premium in my tiny kitchen so I always check out the reviews (and Cook's Illustrated) before I buy, especially since I'll have to get rid of something else to make room. I am certainly NOT missing the Cutco bread knife (wedding present) it replaced. I with I'd gotten this knife sooner!
The only downside is storage - this is a LARGE knife. It will not fit in my knife block (or most blocks I've seen in stores). If its going to share a drawer with other kitchen tools you'll want a wrap or guard to keep it safe.
Customer Review: A great tool! Summary: 5 Stars
I have been looking for bread knife longer than the typical 8" but also one that had an offset handle. I make some larger loaves in the oven but even my breadmaker loaves are a bit big for an 8" knife. The curved blade and long length of this knife make any size loaf workable. If I have one concern it is that when cutting a heavy or stiff bread the blade drifts one direction or the other. I have learned to compensate for that characteristic. For that I would deduct a star but, this knife cuts a whole lot more than bread. I use it for meat, tomatoes, mushrooms, or most anything in the vegetable kingdom and meats (but not bones).
At $26 or so, it is a great value. I looked back on my Amazon purchase and found that I paid a lot less.
Customer Review: Best Christmas present ever!! Summary: 5 Stars
I've made fresh bread for a few years now, and every time I went to slice it I would lament my lack of a good bread knife. Loaves would get squished and torn every time I cut a slice!
This year my hubby surprised me by getting this bread knife for Christmas. And wow... AMAZING!!! No more squished or torn bread! Also, I always have trouble cutting straight, but this knife cuts so cleanly that I can make even slices. Woohooo!!!!!! ^_^
Another reviewer mentioned that the blade was thin, which surprised me. The blade is thick along the top (dull) edge and tapers to a sharp edge. It's heavier and thicker than any of my other knives. It's DEFINITELY not flimsy or thin!
