Kitchen and Housewares Reviews of Victorinox 47508 3-1/4-Inch Paring Knife

Customer Review: The Absolute Best
Summary: 5 Stars

This is absolutely the best paring knife I've ever purchased. I bought it after reading in Cooks Illustrated that it beat its more expensive peers in essentially all of their tests, and it has done the same in my kitchen. It is a little more flexible than most paring knives, though still rigid enough to be used with anything. I end up using it for tasks that would normally require a much larger chef's knife because it's so convenient and comfortable.

I generally use Wusthof Classic knives, including a Wüsthof Gourmet 4-Inch Paring Knife that costs $19. That's enough to buy three of these perfect little Forschner knives and still have some money left over. Do yourself a favor and buy the three Forschner ones.

Since my original purchase, I have bought at least 5 more of these knives for myself and others. Never will your loved ones be so thankful for a $5 gift!

I've had these knives for a while and have had no issues with them losing sharpness -- I occasionally run the knife over a sharpening steel just to make sure the blade is still aligned, but it really shouldn't require any care. And if you do have any problems -- hey, it only cost five bucks.

Customer Review: Sharp and versatile little knife
Summary: 5 Stars

If you understand what this little knife is for - it will probably become one of your favorites. It is very sharp and the blade is a little on the thin side. Certainly thinner then the blade on my Wusthof Classic paring knife. This virtually never matters for the knife's intended purpose. It is not a miniature chef's knife. Some people use it as if it is.

It is great for peeling and slicing fruits like kiwi - or removing the stems from strawberries and slicing them up. It is handy for peeling potatos (though I usually use a potato peeler for that task). It is often the go to knife for cutting sandwiches (though on the short side) and small muffins. It is sharp enough to dice tomatoes (however a serrated blade is better). The thin, short blade does not lend itself to larger or harder objects, such as apples or carrots (it seems obvious, but after reading some of these reviews...)

In short, I highly recommend this knife for what it is. The Wusthof is better - but the Wusthof is $40. For the price this is an excellent knife and a fantastic value.

Customer Review: Razor sharp, perfectly priced
Summary: 5 Stars

After reading a review in America's Test Kitchen Cookbook (the same people who put out Cook's Illustrated), I decided to "splurge" on this paring knife. What a great decision!

This thing is razor sharp, even out of the packaging...I mean, super dangerous sharp if you're not ready for it. But dull knives are really the dangerous ones, and this thing will not slip due to lack of a blade. After resharpening with a tool (also from amazon) after a few months, it was back to its original sharpness again without much effort at all.

The price is low enough that I got several to drop in Christmas stockings last year (safely enclosed in packaging of course ;) My mom was a little annoyed that it outperformed her super expensive Shun paring knife, but appreciated it all the same.

My only slight reservation for this guy is that it's super light - maybe a little *too* light. However, the utility and price more than make up for it, and it's just a small adjustment to get used to.

Happy paring!

Customer Review: Great knife
Summary: 5 Stars

I remember having these at the house when I still lived with my parents. They were always my go-to knives (we had several) if I ever needed to cut ANYTHING. I randomly came across them at a Restaurant Supply store and had to pick one up. I love this little knife! I made bruschetta last night and slicing the tomatoes was a piece of cake. It allowed me to slice the tomato like I would an onion - and all without splattering the juices and crushing the tomatoes. That same night, I also cut the french bread into tiny crostini slices and then my lasagna with it LOL. For the record, I hate slicing bread since it gets crumbs all over the place. Crumbs were minimal with this knife. The only thing is that it IS only a paring knife and the blade is not that thick, so it's not ideal for slicing bread, but still works well. I love love love this knife!

Customer Review: Just Another Disposable Knife
Summary: 2 Stars

I had high expectations for this knife based on the good reviews. We have a 2.75 in Henckels Twin Pro S Paring/Boning Knife that my wife absolutely loves and uses it as a paring knife. I wanted something a little longer that will hold up to my forceful ways.

This Victorinox 3 1/4 Paring Knife is sharp in a dull way and the blade is flimsy. Basically, it is sharp enough to peel and cut, but you would have to apply more force with the fear that the blade may snap. For example, to slice an apple, this knife would stop at the apple core and requires more force. The Henckels paring knife would just slice right through without stopping.

You actually will get what you pay for with this knife, meaning a $5 knife. Compared to the Henckels $40 knife, you can definitely see and feel the $35 difference.
