Kitchen and Housewares Reviews of Victorinox 46892 Fibrox 3-Piece Chef's Knife Set

Customer Review: Nice for the price
Summary: 5 Stars

I bought the 10" bread knife on the recommendation of a PBS cooking show and was impressed so I bought this set.
The knives are very sharp and seem to hold an edge, though I have the Chef's Choice 130 sharpener if and when I need it.
I'm adding the 7" Graton (sort of to replace the Wustof) and 8" Chef's (the 10" is often too long for quick chops.)
I have a Wustof (Classic 7" Sankotu) and even one Cutco that are very sharp and keep their edge, but these have better handles (IMO) especially when my hands are wet. I have severe neuropathy (nerve damage) in my fingers and the Fibrox handles are easier for me to control.
If price was no object, I go with Shun, but for less than $150 I put together a very decent set using the Victrinox Fibrox handled knives
Edited section
I forgot to mention that the blade on the 10" Chef's knife is taller than most and you may need to modify your knife holder (using a dremel tool or something similar to widen the slot) to accommodate it.

Customer Review: Excellent knives
Summary: 5 Stars

I bought these knives after a news piece on NPR mentioned them as an example of a relatively well priced 'good' brand of knives. The guest on the program had written a book on kitchen knives which at first sounded kind of ridiculous. Needless to say, l had never thought much about the knives l use before. This set has certainly changed that. Compared to my previous generic 'made in china' wooden block set of knives, these have much better feel, grip, balance, are much sharper and easily are up to all the common kitchen/barbecue tasks. Definitely worth the price and l guarantee an eye opener for any other knife novice out there.
The only inherent negative which my wife raised quite rightly was that these are so sharp that an accidental cut is likely to be deeper than usual. We are therefore being doubly careful as we enjoy our new versions of a previously mundane kitchen tool.

Customer Review: THE best for the price
Summary: 5 Stars

After searching stores looking for a knife set I began researching online. I found this set and was a bit reluctant. They didn't come with a knife block, they didn't have wooden handles, and the brand wasn't ringing a bell. But they were rated so highly, and the comments so positive, I decided to take a chance. They are AMAZING! Manufactured by the company that makes Swiss Army Knives, they are beautifully made. These three knives will do virtually anything you need done in the kitchen, so you don't really need more knives. They have excellent weight, good balance, and the grip feels ergonomic. While priced at the low end for good knives, you feel you are using the Mercedes of knives. This is a great set for anyone who loves cooking or quality. And as an aside, I was happy to have to find an alternative to the knife block. I got a strip magnet, and it is so much better!

Customer Review: A great starter set
Summary: 5 Stars

This is my first set of "real" knives, and they are great! Very comfortable to grip and use, and they are super sharp. When they first arrived, my roommate ran his thumb over the edge of the chef's knife and expressed skepticism about its sharpness. So he picked up a piece of paper and sliced at it. The cut was quick and smooth. He was impressed. My experience cutting tomatoes--often a good test--has been the same.

I had done a bunch of research before deciding on these knives. They are definitely a good buy, lots of value for the money. My only slight complaint (and it is really not much of one) is that they are advertised as dishwasher-safe, though hand washing is recommended. But when the set arrived, its instructions say specifically not dishwasher safe. It hasn't been a big deal. I wash the knives lovingly by hand.

Customer Review: Excellent for the money
Summary: 4 Stars

I have not owned expensive knives before, though I have used those belong to others. These are a tremendous improvement over your set of department store cheapo knives.

My primary complaint with these knives are that the lip on the handle of the two smaller knives extends below the blade, making it difficult to cut down against a cutting board. Because of that, I pretty much always use the big knife. Maybe I am not doing something right though, what do I know.

I was worried about the lack of a serrated blade, but I have found these knives to be very sharp, and they will cut through something delicate like a tomato without the need of a serrated blade.

If you are looking to upgrade your knives, and spending $100 per knife makes you queasy, this set is the way to go.
