Customer Review: Excellent Knives for the Money

Great set. I did what most of the others leaving comments did by researching the best rated, modest priced knives on Amazon. These came out the clear winner. I expected a good, quality product from Forschner by Victorinox, based on owing other Victorinox products. They are almost always the very best quality for the price.

I was not disappointed with this set. The blades are solid and very sharp. The can be resharpened as needed, unlike my previous Henckles set. This set is not the prefect combination of blades for my use, but are getting a great run. My biggest critique is the size of the 10" Chef knife... it's a little big. The slicing knife is too. But you get a great and versatile blade in each size. The set would work better for me with an 8" chef's knife. But the 10" will get a workout the next time I need to butcher a chicken or 7-bone roast.

Some people have said these are a bit light. I find the weight just right. The are very well balanced and take hardly any effort to cut. I was concerned about the handles, but they are excellent with great grips and a nice texture and look.

All in all, I'll be looking for a couple more Forschner knives of various sizes to round out the set as needed. It's nice there are so many others in the series available. It would be good to have a block that you know will hold these. None of the blocks shown have good enough descriptions to know if they will take the 10" Chef's. I may just have to do some carpentry on an old one to make it fit.

If you are looking for great knives at a good price, give these a try. They are far superior to any of the others I've seen in this price range. By the way, I picked them up when the 3 knife set went to $36 a few weeks ago. They have ranged between $36 and $65 for a while, usually around $50-$55. At any of those prices, it still a great value.

I purchased these with the need for affordable knives, and I saw the perfect review score for this set on Amazon (18/18 reviews at 5 stars). I figured I couldn't go wrong.
I didn't.

Obviously the most important trait of a knife is how sharp it is. These are simply the sharpest knives I have ever used. I've used cheap ones that cheat and use a serration to achieve sharpness, and I've used pricier Henkels and similar. A sharper knife is actually a safer knife, since your cuts will be precise. A duller knife won't cut where you expect and can cause injuries that way. To give an idea of how sharp these are, I was able to easily slice a bagel without using a saw motion at all. Not impressed? I did the same with a ripe tomato. Yes, slicing a tomato with just pressing down. I'd never been able to do that with the Henkels even after a fresh sharpening. These knives have made so many kitchen tasks so much easier.

What's even better is that for the price of that Henkels chef knife, you get 3 of the most useful knives to have in the kitchen. This price is simply amazing for what you get.

Well, nothing is perfect and unfortunately these knives are no exception. After being used to the Henkels chef knife, this Forschner was startlingly lightweight. I know that over time I will adjust for it, but I would have liked more weight I suppose. I would just suggest that until you're used to the weight, just be extra careful with the chef's knife. All said, this is such a minor setback for how amazing these knives are otherwise.

There is a reason why these knives have so many 5 star ratings. They are simply that good. For the cost, there is no way you will regret buying them. I purchased these on a budget, and down the road when money isn't an issue, I'll be looking first at Forcshner/Victorinox.

I bought these knives in preparation for moving into my first home in early 2010. It is now early 2011, and I have used the knives for about 10 months - enough time to have used the knives enough to write a proper review.

All three knives have the Fibrox handle that is apparently love it or hate it - some people find that their hand just does not fit with these knives. I have largeish hands and have no problems with the handles whatsoever. All three are also stamped steel, as noted in the product description. This is a departure from higher end knives, but I have found that these knives hold their edge well enough. I have not sharpened the knives since I bought them, though I do hone them frequently on Victorinox Cutlery 9-Inch Round Sharpening Steel, Black Plastic Handle. They hone up nicely.

I primarily use the 10 inch chef - it's a wonderful all around knife. Cuts well, rocks well, I enjoy dicing with it. Wide blade is great for crushing garlic. Well balanced.

I don't use the other two knives much - I will use the slicer if I'm slicing or if the chef is dirty and I'm unable to clean it right away. The utility knife is really used for opening packaging, that's about it.

My only complaints about the knives are that they are lacking a heft found in better quality forged blade knives - I do prefer a heavier knife, just feel wise. Also, the handle on the slicer is stained white somehow - not sure how it got that way. Otherwise, I would absolutely buy these knives again, and recommend them time and time again to people looking for a great knife that won't break the bank.

I was dining with friends at a high-end restaurant a few years ago when one of the party members asked to see the chef to complement him on the meal. The chef approached our table with a big smile. He was also holding a 10-inch chef's knife (not menacingly I might add). I noticed that the knife was stamped and not forged and said, "What, they don't pay you guys enough to buy good knives for the kitchen?" He laughed and replied that this was one of the best knives that he had ever used. I asked him the brand and he said Forschner Victorinox. That night I went home and googled it and began reading the reviews. The one from Cook's Illustrated intrigued me. So I went directly to Amazon and purchased the three piece set.

As a chef and cookbook author I own several sets of excellent knives (Wusthoff, Henckels) but the Victorinox is the one I use for all of my cooking demonstrations and presentations. Why? It's light, is easy to sharpen, and holds an edge. Plus, I love to tell my audience that while they might do well spending $100+ for a good chef's knife like a Wusthoff (which I also love), they can save some money without sacrificing quality with the Victorinox.

I own a lot of knives, Shun, Kershaw Wasabi, traditional style chef's knives too. Saw these on the cooking show and figured I give them a try, the 3 piece set cost less than one of the other knives. I didn't really have high hopes for a stamped knife but the reviews were good. Anyway, when they arrived I inspected them, nice handle, big and easy to grip. Rinsed them off and put them on the magnetic knife rack.

This evening I cooked a frozen pizza. Took the chef's knife down (it's huge) and used it to cut the pizza into slices, no slicing motion, just heel of my hand on the tip and rock down through the pizza to divide it up. What I need to mention is that the pizza was on two paper plates when I cut it up... I picked up the plates to carry into the other room, when the pizza slices fell through the neatly sliced plate on to the floor! I was surprised and the dog was ecstatic!

Bottom line, these are the sharpest knives I have ever owned, cut through a heavy paper plate with just slight downward pressure. Can't wait to do some real slicing and dicing with them. They are a great value.
