Customer Review: Awesome both quality and price

I took it to a local pub to let the female bartender I know use it to slice her fruits. As it would go, she didn't need to that day (first time ever :)). It was slow and she was bored and decided to try it on an orange. It went through it almost by the weight of the knife itself. She was so impressed, she had one of the waitress's who also bartends try it. She insisted on finishing the orange she like it so much. They gave it to the cook and he used it on a tomato and he gave it high compliments (which trust me he doesn't do often). I gave them the knife which took a lot of convincing. They thought it was too expensive. Even after telling them it was realitively cheap, they still guessed over $50. I finally convinced them and ordered another one for myself. I haven't used it on meats yet, but trust me, it's so sharp I have no doubts about how well it will do. I highly recommend this knife (just be warned to be carefull. it would go through a finger very easily)!!

I love the fibrox handle - cutting bbq from my smoker or trimming meat for any type of cooking, it never feels slippery. 8 inch blade is easy to handle. My wife and I found the blade to not be up to our standards for sharpness out of the box and testing against her favorite chef's knife proved first impressions to be true. Sharpened, it became the workhorse knife of the kitchen.

I just chipped the blade abusing it by substituting it for my missing butcher knife and am back to buy another. If the "boneless" frozen pork been truly boneless, it would have survived. Coming back to buy another is probably the highest recommendation I can give but it has as much to do with it's price as it does it's utility.

My wife still prefers her Japanese knife but we certainly wouldn't try to substitute it for a butcher knife due to the cost. With the relatively low cost of the Forschner, I don't have to worry. Wish I could graft the handle to all my knives.

If you cook AT ALL, you should own this knife. If you're looking to get your feet wet with a premium knife because the knives you've been buying at the retail chains just don't seem to cut it--BUY THIS KNIFE. It's sharper than a lot of your premium brands because if you look carefully, most of those primo brands offer a bottom of the line knife and you end up paying for the name rather than the product; this knife, sharp as top of the lines: It's the KNIFE USED IN PROFESSIONAL KITCHENS! Also, if you're looking for a knife lighter than the Wustof or Henckels--BUY THIS KNIFE! You can pony up for the lightweight and equally impressive Global, but it's going to cost you an extra $50 or $60. My girlfriend LOVES this knife! I also advise checking out the plastic cases for these knives in case you're short on kitchen space or, I kid you not, you may just want to take this knife to show your friends; it's that incredible. In short, don't second guess--BUY THIS KNIFE!

Customer Review: Professional edge and durability at a budget price

This knife is a workhorse, made to stand up to years of punishment in a restaurant kitchen. It is not a flashy, delicate show knife, shimmering with the ripples of hand-forged Japanese steel. It is not a heavy, solid Wusthof or Henckel blade, built like a tank. The Victorinox (Forschner) knifes sits between these two extremes; the blade is thick enough to handle punishment, but light enough to make 20 pounds of julienne onions easy. The Fibrox handle is impact resistant, easy on the hands, and grippy even when slicing greasy sides of bacon. Lack of a bolster means the entire blade is usable, and facilitates honing and sharpening. Full-tang construction gives it good balance, and durability. The steel holds an excellent edge, but is still flexible enough to hit bones without chipping and breaking.

My 8" Victorinox chef's knife isn't gorgeous, but it's hard to argue with the results it delivers day after day in a professional kitchen.

I have never been in a kitchen until about 4 months ago and I have been spending a lot of time cooking in the recent past. I am still learning and am a amateur chef.

On a regular day, I cut a lot of vegetables, seafood and also meat. This knife is just plain magic on herbs. I made a mistake and started with a 10inch knife, also from the same manufacturer- [ http://www.amazon.com/gp/product/B0000CF8YO?ie=UTF8&tag=superkitchen-20&linkCode=as2&camp=1789&creative=390957&creativeASIN=B0000CF8YO ], but I think this 8 inch knife fits my needs better. I returned the 10 inch knife and got the 8inch knife.

The handle is perfect, had not slipped once and also I feel a lot better with balance in holding this knife, than I did with the 10inch knife. I wear gloves sometimes, and sometimes I even use this with wet hands and this knife has been perfect till date.

I am an amateur and this knife fits me better [personal opinion].
