I picked up this knife on recommendation from Cook's Illustrated magazine. It's everything they say it is and more. The handle is nice an grippable but not too squishy. The blade is sharp, and there's enough weight to give you chopping power but not too heavy. The design and shape of the blade - often the most important factor - gives a good slicing ability. The belly of the blade (where it starts its curve) is perfectly shaped and whips through onions and potatoes with ease. You almost WANT to find more veggies to cut. The blade is very stiff, yet as I said not overly thick and heavy. The blade is sharp enough to even use on dense bread, if you don't want to break out the bread knife. It whips through tomatoes easily and cleanly.
And for crying out loud, it's under $30! I'm not going to say, yeah - it's not quite a Henckels or Wusthof (which I've used), because the thing is, it is - for a lot less.

I bought this knife eight months ago and have loved it since the day I bought it. When I received it, it was so sharp that it could shave hairs off of my arm. For a stamped blade, it seems very strong and durable. I have not had any problems with rusting or dulling.
The handle is not a cheap plastic handle, it is a durable textured handle that seems like it will last a long time. I also have the rosewood-handle version of this knife. While the rosewood looks nicer and seems more elegant, the Fibrox handle is more comfortable to use.
Since buying this knife, I have also purchased the Santoku version, and the Forschner paring knife, both of which live up to the high standards set by this knife. I tend to use the Santoku version more, but this is just personal preference based on my style of cooking. All of the R.H. Forschner knives are great products at excellent prices.

I wanted to buy a good Chef's knife so I went to the America's Test kitchen web site to check their reviews. I trust them to give a informed opinion on cooking utensils. This knife was their pick, in fact, they say, they use it in their test kitchens. I have had it for about two weeks. It is a great knife. Comfortable to use, balanced in the hand, not to heavy. Makes cutting vegetables for soup a breeze. I make a lot of soup, in quantity. I am so glad I bought this knife. It even cuts tomatoes and grapes without tearing. Previously, I would have used a serrated knife. I really like this knife Victorinox Fibrox 8-Inch Chef's Knife and highly recommend it. For goodness sake look at the price. I was all set to buy a much more expensive knife. I never dreamed a knife for this price would be so perfect.

I bought these as a gift for my son who didn't have a knife that would cut butter, being a semi gourmet cook I am very picky about my knives,I have a lot of Cutco Knives which I love, BUT for the price these are the best knives I HAVE EVER USED!!! I was so impressed,he had Christmas at his house (but I cooked haha)so I got to try them out and I am planning on ordering some of these for myself. Good feel, sharp, just very impressed. Wish I had found these before I just spent so much money on my additions to my cutco collection! HIGHLY recommend. This was such a surprise, as I wanted him to have some "decent knives" these had such good reviews I thought they would be adequate for his needs. These knives are great for any cook!!!! He was even impressed with the knives!! If you are looking for a good quality knife at a resaonable price you cannot go wrong making this purchase.

I am not an expert but I am in the kitchen a lot since I love to cook for the past 40 years. I bought a Chicago brand knife years ago and loved it but I lost it somehow just recently so decided to buy this knife after reading the reviews. I was not disappointed! Caution, this knife is super sharp and should not be tossed in a drawer like I did when it arrived at my house. I was rummaging around in the drawer looking for a spatula and got nicked by my new knife and was bleeding profusely. After that I use it with caution and wash it right away(do not put it in sink)and store it in a place where I wont get nicked again. Never had a knife this sharp and was afraid to use it at first but what a dream for cutting thin beef strips for stir-fry and chopping onions and celery. I am now ready to buy some more from this knife maker for different uses and with confidence.
