I have been looking for a knife that will carve for some time and came across this knife in a cook book of all places. I bought it and was immediately impressed by how well it works. The blade is long which allows you to draw the blade in on direction through most pieces of meat. This helps in making even slices - and since I am trying to get thin even slices for cutlets this really does the job. Its like slicing through butter. If you need a knife to help carve you cannot beat the price and quality of this gem.

Like many of the reviews have said this is a great knife and a good value. I also saw the saw the high rating on America's Test Kitchen/Cooks Illustrated and went with the Victorinox 12-Inch. Made an eye round roast tonight for dinner that came out amazing. Trimming the roast before cooking and carving it after was like cutting thru butter. Only issue is my wife is worried I'll cut of a finger and not even notice given how smooth this cuts. Will have to be careful, but the knife is great!!

This knife has cut into 3 different eye roasts over the past month. It has allowed me to achieve exactly what I wanted - extremely thin slices allowing the cheaper piece of meat to be forgiven. My only complaint would be that such long equipment doesnt mean much until you receive it....and when it does, 12 inches seems quite long for storing in the usual places. It needs its own sheath and place in a drawer which has me and my wife uncomfortable. And that is why I give it four stars.

I just used this slicing knife on rib roast at Christmas. I couldn't believe how easy it was to slice the roast. This knife is really sharp. My dad was a butcher and this knife is even better than his butcher knives. This carver is as sharp as any expensive knife that sells for over $200. The handle is made of a material that prevents your hand from slipping which is really nice. I purchased this knife upon Cooks Illustrated recommended and they were right.

This is a wonderful knife at a bargain price. Readers of Cooks Illustrated will recognize this knife as one of their top rated knives, and there's good reason. This knife is the perfect length for slicing roasts, hams, etc, with a single stroke. It comes with a nice edge right out of the box, and it holds its edge well.

This knife is proof that you _can_ make a great stamped-steel knife (even if most manufacturers don't).
