This is a great bread bin design. I bake whole wheat bread for our family every day, and I've been storing my bread in this bin for about 4 months now. The bread stays fresh, but the design of the bin allows it to breathe (which is very important in order to avoid a moldy loaf.) I bake in a Zojirushi bread machine (which makes a 2lb loaf,) and my loaf fits perfectly on its side in this bin. I also love just being able to take the wooden cutting board off the top, flip it over, and slice away. It's convenient, functional, and pretty sitting on my counter. I so wanted to give this bin a 5!!
Ok - here's the negative. Very shortly after using the bread bin, the wooden cutting board top started to warp. I have been oiling it faithfully with mineral oil, but to no avail. I don't know if maybe the wooden board I got wasn't properly cured?? There is another possibility - I got my bread bin in November. The temps started to drop, heat came on in the house, and air in the house was dry as a bone and has been all winter. I wonder if the board warped because the underside of the board was exposed to the relatively moist air surrounding my bread loaves, while the upper side of the board was exposed to the very dry house air. Just a theory.
I'm returning mine to the store, and because I love the design and function of the bread bin so much, I'm going to order another in the hopes that this was just an isolated flaw in mine. Plan on oiling frequently, and an idea I think I'll try is alternating the side that is exposed to the bread every other time I open the bin. Overall, the bin is a great design, and I'd still highly recommend it if you bake frequently.
