Model 9842. I'm new to the cooking thing, so perhaps I have unrealistic expectations. But I figured "instant read" meant it would provide an immediate temperature readout. When inserted into food, it delivers a readout in about 7-14 seconds as it travels through the numbers. I find it frustrating to monitor frying oil (in a cast iron pan) temp with this unit. It does leave a relatively small hole when inserted in food, which is good, and the cover makes a good "handle" for keeping your hands away from the heat - a little bit. I do like this unit better than the first thermometer I purchased, a Taylor Model 3518.

After reading the product description, I bought this item with high hopes and expectations. Foolish me. I've used both mechanical food thermometers and other electronic models, and while few are competely accurate, the Taylor 9842 set new records for slow temperature acquisistion and wildly varying temperature readings. It would swing 40 degrees up and down and rarely wanted to settle down. Completely useless. If you need to gauge the 'doneness' of meat or to determine when chickens, turkeys or foods in a smoker have reached the appropriate internal temperature for safety, stay away from this model!

I was in desperate need of an accurate thermometer for candymaking and chocolate tempering, and thought it wouldn't be such a bad idea if I could also have something useful for everyday cooking tasks like roasting meat. That's quite a temperature range, but this little workhorse does it all, and with speed and precision, too. As other reviewers have suggested, this thermometer is only fast when you turn it on *after* having the probe in place. I usually get a solid reading about 3 seconds after powering it on. I am entirely pleased with this indispensible piece of kitchen equipment...a great value!

I found this thermometer slow in reaching the temperature, certainly not instant. Furthermore, I found the readings inaccurate on several occasions. I bought the thermometer for tempering chocolate, but it was unsatisfactory for that purpose; I would get readings of 15 degrees variance in different parts of a small ceramic dish without a heat source. I also could not get accurate nor timely readings for other candy-making.
It was accurate and consistent for boiling water temperatures, but took more than 10 seconds to obtain the reading. This is not satisfactory for candy-making.

I love this little digital thermometer. I have only used it a few times, all for checking my water temperature to proof yeast in. I have always had a hard time judging water temperature for yeast, and would often kill my yeast. This is the reason I bought the thermometer, and it has been working like a charm! All my yeast attempts have been successful and I have made many wonderful different types of breads and even successfully made croissants this past weekend. Because I have only used it for water, I have yet to wash it, but would never submerge it completely in water, just to be safe.
