Customer Review: Great Pan

This is a copy of my review on the 8" pan so if you have read that, read no further. I consider myself a chef-wanna-be. I cook on average 5 days a week. I have almost every cooking gadget available (within reason). I have had many, many non-stick pans and the higher end ones have lasted years. I also have a complete set of All Clad (regular, not non-stick) and love them. Lastly, I receive a magazine which rates products and recipes and accepts no advertisement (not CR). They rated these pans as good or better than the All Clad non-sticks... at about 1/3 the price. I purchased the 8", 10" and 12" pans. I have used all of them on numerous occasions. They are by far the best non-stick pans I have ever had. Why? Because they cook almost like a regular pan as they make a decent fonde, but still act like a non-stick in terms of releasing food and clean-up. The pans have a red dot in the middle which when heated enough, turns solid red. I like that but don't consider it a huge advantage as I know when a pan is ready for cooking by the oil/butter in it. But for those not using either, it would be helpful. The pans are rather thick for non-stick which requires a bit more time for heating, but nothing of any real significance. On the other side, they stay hotter longer off heat. So a bit of adjusting is required. Many people won't even notice these things. They have high edges which makes flipping anything very, very easy. Frying eggs on these pans makes a huge difference in flavor (again due to the fonde). One last thing; the pans are on average larger than normal. The 10" pan is almost as big as my "standard" 12" pan and the 12" pan is closer to a 13" pan in terms of usual sizes. No complaints just something to consider. Again, these pans are the best non-sticks I have ever used. Only time will tell as to their "life" but in the meantime, I 100% recommend them to all!
