Few things are more appetizing than a golden case of puff pastry filled with an exquisite dish like sweetbreads a la financiere in truffle flavored Madeira sauce with green olives, mushrooms, truffles, and veal mousse dumplings. As they have for almost every special culinary preparation, the French have devised themselves professional tools for shaping vol-au-vents. For making vol-au-vents this cutter turns out fish shapes rather than the traditional round ones. The inner cutter doesnt cut entirely through the dough and thus the center is anchored only lightly at those corners to the outer border of the pastry. The extra sharp blades of the cutter pass cleanly through the puff pastry without sealing the edges together which would prevent it from rising while baked. 6 inches in length by 3.25 inches at the widest.
