The Splash-Proof Thermapen is the best cooking thermometer, bar none, on the market. Is it expensive? Would you expect perfection to be cheap? Of course not. I agree that it costs more than the average thermometer. But look at just three of the helpful things it does:
1. gives you the temperature of a food in under three seconds. No other cooking thermometer does this. Your oven won't lose a lot of heat as it would have if you'd waited 20-30 seconds for a reading with another thermometer.
2. reads anywhere from below 0 to 572 degrees F. Make sure your food is really frozen, or take the temperature of your oil for deep fat frying.
3. turns off automatically after ten minutes just in case you forget to do it manually. No more dead batteries.
It also reads in either Fahrenheit or Celsius and is sturdy. I've dropped mine, which is not recommended by a long shot, and it was fine. I later ordered a silicon sleeve from the company to protect it from falls and give it even greater splash protection. You can also buy a case to protect it in your gadget drawer. Additionally, I've had mine at least a year and the battery is fine.
I was always a very good cook, but now, I've overcome a few weak areas. I can check on a chicken or turkey to make sure the breast is done, but not dry, yet the dark meat is fully cooked. Sure, that's a trick of technique first, but to be absolutely safe from bacterial contamination, the Thermapen ensures you're at the required temperature to kill salmonella.
Another tricky thing is baking bread or cake until done but not dry. Most breads will be done at 190 F., and most cakes at around 200 F. You'll have no more waiting until the edges are pulled away and brown (overdone) and the outside is golden but the inside still doughy (underdone). Can you do this manually with experience? Of course you can. But now I don't have to. I take its temperature from the side of the bread or cake so that there isn't a small hole in the top (the probe is slim). Frosting will cover it on a cake, as well.
If you have trouble grilling steaks to precisely medium rare, you will no longer. By practicing with the Thermapen, you'll soon be able to teach yourself how to do it with just your fingertips.
I'm sure I've forgotten some of the good things about the Thermapen, but you get the idea. It's a great kitchen tool. Both Cook's Illustrated and Alton Brown recommend it. How can you go wrong?
