I love using Silpat for my baking needs. Everything I place on it slides off without a problem. My only complaint is that the both sides of my Silpat will not lie down. They curl up in the air as if they are trying to encapsulate whatever is on the baking sheet. I have tried sandwiching this sheet between two cookie sheets and various other methods attempting to get it to lie down. Nothing has worked. I am trying to roll it up backwards and leave it bound by rubber bands for two months or so. I have some other Matfer baking sheets I am using for the time being.
Does anyone have any recommendations on how to make it lie flat?

I bought this item after destroying another "non-stick" pan (chicken with honey baked in a broken stove), and it has been reasonably good at keeping things from sticking to it.
I've baked a couple of recipes in my life, but I don't generally bake anymore. I use the pre-made refridgerated cookie dough to get my "fresh" baked goods. I cannot *believe* how much better these cookies got once I started baking with the Silpat. The bottoms are beautiful, and just slightly crispier than the tops, and they're cooked evenly all the way around. I think I'm going to have to buy another one of these to keep at my boyfriend's place.

When I received this product I didn't know what to think. The texture of the baking mat was sticky and despite the positive reviews on amazon I was skeptical. After using the baking mat for different tasks from broiling a roast to making caramelized pecans/almonds (for salad), I hooked on this thing! I definitely plan to purchase this item as a stocking stuffer this Christmas (4 for 3 offer, oh yea!!) and spread the word that the Silpat baking mat should be a staple in all kitchens!!
The only downside I have found is that the mat has slowly lost its original color due to stains from the food placed on the mat.

I've had several people tell me I needed these, and I see them used all the time on Iron Chef on the Food Network. Did I really need silicon baking/freezing mats?
Well, the answer is absolutely YES! I don't know how I baked without them. You can roll out cookie dough, pop them in the freezer, then go straight to the oven. Nothing sticks to them, and the clean up is a breeze.
I liked it so much I ordered more. I haven't had any problems with them smoking. Maybe reviewers are cooking them at a higher temperature?? (It's safe up to 400 degrees).
I highly recommend this product.

I got two of these right before this past holiday season and I was so thrilled and pleased!
A long time ago, in college, I worked for a fast food sandwich chain that bakes its own bread and cookies and they used silpats. I fell in love with silpats then and looked everywhere for them, but never could find them. Then I started seeing these in high end cooking stores and I knew I wanted them.
They are expensive, but worth every penny! Never had any problem with durablity or wierd smells, as mentioned in other reviews. Perhaps some people haven't read the directions for use carefully.
