Customer Review: Ok, Not great for the price

I have several high end Japanese knives, I usually go to Korian in NYC and they help me, I am spoiled by working near a major importer and a top knife store. However, one day at work I decided to try this one, heck ordering from Amazon is sometimes to easy. In any case when I received it I looked at it and like most Japanese knives the handle was not grate where the metal met the wood it was ruff, no problem nothing a little 1000 grit sandpaper can't fix. This bugs me but I have learned this is usually the case with med end Japanese knives and I have to live with it. They spend more concentration on the blade. Also the handle was so coated it felt like plastic, I prefer a more wood feeling it is less slippery when it gets wet.
Now for the blade. It looked manufactured. It is not real damastic, this we know they Shun doesn't clamed it is but they don't tell you it is not either. It is however several layers of steel pressed together some how and usually makes a good blade. This is similar to my other grate Japanese knives and what you will find under $350. It does look allot more machine made though than others, the one I received had a defect on the tip that had been buffed out but the indents where still there :0 What the heck! This is totally unacceptable. My guess is no one even looked at this it was probably machined sharpened thrown in a box and shipped. Also the grind was an American 50/50 with he same angle all the way back. Most better knives that are hand sharpened use a 70/30 grind so the angle changes from the fount of the blade to the back. This is an major improvement the Japanese have made to the American grind and it is what they use in there better knives.
Over all it was a nice looking knife that seemed very production made right down to the machine painted logo. The defect I had in mind was totally unacceptable and soured me, I was going to buy a steak knife set from them but I don't think I will now.
