Customer Review: Extremely Sharp

UPDATED REVIEW
So, after about a month's worth of use, the tip of the knife has broken off due to accidents that weren't out of the ordinary. The sharpness has dulled quite a bit, and I have lost confidence in the sturdiness of this knife. I have since purchased a MAC MTH-80 and have noticed that the MAC has equal sharpness if not more and has a better overall feel. Still think this is a good knife, but I currently believe the MAC line is better.
OLD REVIEW
The advice to be careful with this knife should be heeded. I didn't give this knife its full respect, so my fingertip payed the price today.
At Sur La Table you can try out the knives with a potato or an onion, and I'd highly recommend this, because you can feel how this knife is different than a Global or a Wusthof. The Global, for instance, is very light, but evenly balanced so when you make a cut, the cut isn't as focused, as the knife can waver. The handle on this knife has a good weight and the top of the blade is very light, so it allows you to focus where you are cutting, so you can make very thin slices. The blade itself is surprisingly light. The handle is also very ergonomic, so it is comfortable to hold.
I compared this knife to an older Shun that I had at home and a Victoronix santoku (both good knives) and where I noticed the difference most was with a lime. Limes are usually tougher to cut through, so with most knives you have push and pull in order to get a good slice. With this knife, I could flick my wrist and it sliced right through a half lime. Kinda blew me away. Again, this is why you need to be careful.
Shun seems to have been inspired by Bob Kramer (search "bob kramer knives" on YouTube), as the steel on this knife appears to have a similar patterning in terms of how it was forged.
I liked Shun's older model of knives, but didn't quite see why they were so raved about. This knife, however, ups the ante and I believe it's worth every penny. But, again, be careful while using it because it doesn't leave much room for error.
