The knives are five star all the way. Shun makes amazing knives.
But if you paid for a wood handle set and get a steel handle set, you HAVE BEEN CHEATED. Search for:
shun stainless handle steak knives
...and you will see that many places offer the stainless handel set for as little as $199. Wood handle sets cost way more, and if you paid for the wood handle set and got stainless steel, absolutely get your money back and raise hell with the merchant.
Once again I stress that the knives themselves -- whether stainless handle or wood -- deserve five stars
But ONLY if that is what you paid for.
Description of Shun DMS400 Classic 4-Piece Steak-Knife Set
The Shun Steak Knife slices easily through everything from thick filets to blackened rib-eye, without compromising flavor. Even poultry and other meats will taste better. Kiss those old, serrated steak knives goodbye.Made in the ancient city of Seki, Japan, Shun knives rely on extremely sharp blades, made of Japanese VG10 steel clad with 32 layers (16 on each side) of high-carbon stainless, it delivers precision slicing, cutting and chopping unprecedented by its competitors. Imagine, a knife made the same way as ancient Samurai swords, handcrafted still today. Sharper out of the box than other knives, the Shun Classic maintains its sharpness longer, since the finely-polished blade edge has a natural tendency to remain straighter, yet can be honed using a standard steel or sent to the factory for free sharpening. The wavy, Damascus-look pattern on the blade offers stick resistance, reducing prep--plus it's rust-free. The Alton Angle, a design contribution of cookbook author and celebrity chef Alton Brown, provides more finger and knuckle clearance than a standard, straight knife allows while cutting and slicing. The 10-degree angle at the bolster also provides extra leverage to improve control and efficiency, particularly useful with smaller knives.
