This is the best knife we've ever owned. My wife ditched all the other high-end name brand knives we owned (such as Henckels and Wüsthof) for this knife. great knife for any type of chef or cook. 7 in. blade is not to big, and doesn't feel small in your hands. comes with the best factory edge out there. razor sharp right out of the box! easy to maintain, great all round knife, feels great in any kitchen, at home or at work. recommend buying a cover.

I will admit up front that I am a relative beginner when it comes to high-quality knives. My family always bought a block with a bunch of decent knives inside. This was the first really good knife I bought and I did my homework, so my satisfaction was not a surprise. This knife was crazy sharp.

The edge was misground. It wouldn't cut all the way down to the cutting board near the heel of the knife. The result is that the knife wouldn't chop properly--ridiculous.
Also, the blade was ground unevenly on both sides--a cosmetic problem, but not cool in a high-end knife.

We noticed several chefs on the Food Network using these hollow ground knives, so after researching the difference between a regular knife and a hollow ground knife, we thought we'd try one. It was AMAZING! Food doesn't stick to the knife when slicing! We want to get another one!
