This knife has great balance with a great edge from the factory. I have used Wustoff and Henkles and in my personal opinion this knife has the same great balance as the Wustoff but a better ergonomic feel and a better egde which results in smoother food preperation. Its great for quick cutting of vegetables and because of the width of this sankotu you feel like your knuckles will be safe from disaster.Customer Review: Dimensions

The overall length of the knife including the handle is 12-1/4 inch.
The length of the blade (cutting edge) is 6-3/4 inches.
The max width (may need this info for knife block) of the knife 1-7/8 inch.

I have a Shun Santoku, and it is very nice -- a good, sharp cutting knive. However, I have found something even better for roughly the same cost -- a Kin. The Kin is more decorative, just as sharp, and offers that extra cache of owning a smaller brand (more exclusive). Try a Kin --[...]-- and get Amazon to carry them.Customer Review: Good Knife

I've only had this a month but it is a good knife so far. Sharp enough to cut beef jerky with out much effort. It cuts tomatoes without squashing them. I always bought crappy knifes so I don't know how this rates against other chef knifes, but this is the last Chef knife that I intend to buy for a long time.Customer Review: This is an excellent knife

It hasn't completely replaced my 10" chef's knife for some things, but for thin slicing vegetables and general use (slicing, not heavy chopping) this is the first knife I reach for. The very thin blade gives great control. I'm a stickler for sharp tools, and this is the sharpest knife our of the box I've seen.
