This is the best kitchen knife I've owned to this point, and I'm not sure that I can find something with this kind of balance and handling. The right-handed semi-round handle fits perfectly and with a comfort I wasn't sure I would get from a round handle. I don't think the handle design has gotten enough mention and respect from other reviewers and descriptions.
The sharpness at which this knife arrived is also a marvel. This is a knife to wield carefully and with precision. This is a knife that deserves a professional sharpening with regular use.
I recommend this knife to anyone that is tired of the J.A. Henkels, Chicago Cutlery and other substandard knife offerings at the mall and want a kitchen knife to be proud of.

This is, quite simply, the finest blade you will ever own. It slices through the hardest vegetables with a lack of effort that is absolutely astonishing. Slicing, dicing and mincing become effortless. You will find yourself expanding on your recipes because the prep work has lost it's tediousness. Take a basic knife course at a local cooking school and learn how to properly care for your knives. This knife deserves the best care and will return your kindness with an absolutely unbeatable edge. And above all else, BE CAREFUL. This knife takes extra care because it can and will cut you with the slightest contact with the edge. This knife demands and deserves respect. I plan on passing my Shun knives on to my son and beyond.

The Shun Santoku is my primary knife in the kitchen, although sometimes I switch to my standard chef's knife. I appreciate the curved blade of the Shun which makes dicing easier than the traditional santoku blade, which is flat. I'm left-handed and have both the left-handed and right-handed Shuns. The knife handle orientation isn't a noticeable difference but maybe it's just me. The knife is sharp as heck...be careful! I use the Shun more than my Aritsugu's (Japanese hand forged knives); one thing, the Shun doesn't rust which is an advantage over the Japanese blades. Also, in my opinion, the Shun could use slightly more weight heft to it but it's still well-balanced. I'm very happy with it.
Customer Review: Blade chips easily Summary: 2 Stars
This knife is very sharp and holds an edge reasonably well. Japanese-style blades really do cut more sharply than western-style ones; this one was a pleasure to work with. However, the steel used for this blade chips very easily. I've had this knife for about two years and at this point it's pretty much beyond saving. I've had it professionally re-sharpened several times, but it has chips up and down the edge of the blade. I baby my knives (a half dozen Henkels, a couple of Wusthofs, and one Global) and this is the only knife I've had this problem with.
If you're on the market for this style knife look instead at Global.
Customer Review: Not a good knife, a great knife Summary: 5 Stars
This is the second one I've bought. The first was for my wife as a gift. She loves to cook (lucky me) and has been using hand-me-down Chicago Cutlery for years. Previously, I bought her a Henckels paring knife. This knife is incredible. We are actually cautious with it because the blade is so sharp. Feels great in your hand, weighty but not too heavy. Most times you don't even need the serrated paring knife because this will do it for you. In the future I would definitely buy another Shun. My mother called us shortly after Christmas raving about the knife (she too is a cook). Great product and a wonderful purchase.
