There are compromises in every choice. The folded steel blade of this knife makes it thinner, and allows it to be sharpened to a better edge than thicker, and/or stainless blade. It also makes it too thin to use with a carbon steel if you want it to last, and hold an edge. So when sharpened with ceramic or stones, it will hold an edge better than stainless, and thicker blades. I use a Spiderco sharpening set myself, and while I also bought my wife a 3.5" Wusthof, she nearly always uses her 4" Shun. She did have the Shun for several years before I got her the Wusthof, so some of that may be just what she is used to, but she loves her Shun, and it is really a work of craftsmanship. As others have noted, this knife is used more than all the others put together. I think Wusthof (Classic and the other high end mdl, not their budget line) is the only knife I know of which comes close, and if you want to be able to use your steel to sharpen your knives, I recommend them highly. Only stones or ceramics will get knives really sharp, steels make the edge rough like a saw, not sharp, and Wusthof, while a really good knife, will not get as sharp as a Shun IMO when using stones or ceramics, Wusthof's also do not hold an edge as well as it lacks the amount of the Shun's carbon in the steel. I do think for some, the Wusthof is a better choice, but for us the Shun is just awesome.
