Kitchen and Housewares Reviews of Shun Classic 3-1/2-Inch Paring KnifeCustomer Review: Sharp and versatile small knife Summary: 4 Stars
Pros:
----
+ Sharp: it is very sharp straight out of the box and like all knives in the Shun Classic line these are made of VG-10 steel that help them hold an edge longer
+ Price: typically this knife sells for half the list price here that makes it a great value compared to others in the Shun Classic line
+ Flat Blade: the straight blade on this knife (also known as a "sheeps-foot") is great for chopping garlic or herbs on a board. A traditional curved paring knife makes that difficult and is good only for peeling things while hand-holding them. One of the reasons this knife is so versatile!
+ Free sharpening: Shun offers free sharpening service on all it's knives and does not make you pay for return shipping! In my case this is typically needed once a year.
+ Weight: weight and balance are just perfect for a paring knife
Cons:
-----
- Cosmetic: The end of the handle is unfinished without the Shun logo and steel plate on it. So, you can see the center of the full metal tang extending all the way through the Pakkawood handle. I'm ok with this but some people may not be.
- Delicate: this, like all high quality knives, is a delicate one, it will chip or even break if dropped to the floor and cannot be used in the dishwasher. I recommend hand washing and drying with a towel immediately after for best results.
- Damascus finish: looks great but won't withstand acidic foods, especially lemons and limes with dull and wear this out - so avoid cutting those. I use a really sharp Wenger Swiss stainless steel knife for tasks like these.
Overall:
-------
Even though this sells for about half the other (Curved) Shun paring knife it still is a lot of money but will last you long if properly cared for. Also, this and one large knife (like a Nakiri or Santoku/Chef's) should cover about 90% of most kitchen tasks.
