I have finally perfected using this tricky Bella Kitchen waffle iron, after many failed attempts with under cooked waffles. And, cleaning the iron was impossible when 'wiping it down' like the directions instruct.
To cook the waffles, I put Pam cooking spray or Crisco butter-flavor shortening on the iron plates and close the plates to heat between each waffle for a quick minute or so. Then I put about 1 1/2 cups of batter on the bottom iron - close iron - flip and wait for it to steam. As soon as it sounds like it is about to burst, I flip it over, the pressure releases, and I hurry to scrape off any excess that has boiled over on the rim. This allows the iron to close completely again and cook to perfection. I continue flipping the iron for a good 10 to 15 minutes, peaking at the waffle ever 2nd turn or so to get it just right. We like ours a bit crispy, and not soggy.
Finally, cleaning this iron was ridiculous until I poured a small layer of clean water into each iron quadrant, closed the iron, and let it steam, then flip, more steam, and rotate half way back, so that the water can drain off of the iron plates, through the sides down into the tray. I repeat this process about 3 times and wa-la, the iron is clean. Then I wipe the outside of the iron with a hot wash cloth to remove the remainder of the batter, etc. drippings.
Hopefully, this helps, because this iron really does make fantastic waffles. PS. After a several week 'Waffle Cook-Off" with my husband, we think that the best waffle recipe is the 'Classic Belgium Waffles' recipe from [...].
