OK, this isn't hotel-quality stuff, and it does warp when it gets really hot. It also flattens back out when it cools off. And it's just about the only broiler pan you can find on the internet -- guess how I know.You can get something huge and expensive from a hotel supplier which doesn't have non-stick coating or you can get this. I don't know why there aren't more available, but this is basically it. Good points: nice size, so non-stick it's slippery. Washing this is amazingly easy. Cooking tip: I like to cook roasts, whether beef, pork, or chicken, on a broiler pan with about 1/2" of water in the bottom. The water boils and evaporates early in cooking so that the meat cooks without drying out, and you open the door and let the steam out with about 1/2 hour left to go so the outsides will crisp. It also helps to keep what drips into the pan from getting burned, because the water keeps the pan from getting extremely hot right away. Then it's easy to use the drippings for gravy. This pan does not warp at roasting temperatures, only when you're broiling, which is a shame since it is, after all, a broiler pan. But I don't broil much, so I don't care.
