I read a LOT of reviews before picking the 26500. I gave serious consideration to the Villaware UNO Classic Round Waffler, but decided on this instead. My initial information source for this, the Uno Classic and others was Consumer search dot com, the first page you get at the moment when you do a Google search on "waffle irons." This won out because the Uno is a lot more complicated and I figure I don't need the 7 power levels (Alton Brown, in his fabulous Youtube waffle schtick says he uses the highest setting all the time), and I certainly don't need the beep, which many find annoying.
I've had the 26500 for about a month and have developed a superb, fast and easy recipe using sourdough, which I worked up very easily just for waffles a couple of weeks ago. It's my variation (sourdough) on the fabulous Belgian Goodnight waffle recipe you can find online. I make a mix of dry ingredients ahead of time. I have a small digital scale in my kitchen, so bear with me. The mix (enough for about 8 waffles):
2.7 oz whole egg powder
2 cups nonfat dry milk powder
3 Tbls sugar
1 Tbls salt
1 teasp baking soda
I sift this together and keep in a covered jar.
To make the sourdough starter:
6 oz water
6 oz flour
1/4 teaspoon active dry yeast
Mix these together and keep in an unused quart yogurt container, covered. Let it sit at room temperature for a day or so and you have a starter. It keeps getting better and better.
When you want to make a couple of waffles, plug in the waffler and:
Mix in a bowl:
1.3 oz mix
1.3 oz water
0.7 oz oil (I use olive oil) This is about 3/4 tablespoon.
vanilla extract and/or almond extract to taste (Optional, I don't anymore)
7.5 oz sourdough starter
Spray the waffler very lightly with cooking spray when the light goes out (I stopped doing that... the waffle never sticks as long as you include the oil in the recipe) and pour 5.5 oz (i.e. half) of the waffle batter into the iron (or, make 1/2 recipe, which is what I do these days). When done, repeat with the rest of the batter. Replenish the sourdough starter with 3.5 oz flour and 4 oz water. If you aren't going to use the starter the next day, refrigerate after a day so it doesn't over-sour and lose its leavening power.

My first waffle was an unmitigated disaster because I forgot to spray the grids first. It took me 15 minutes to pick the pieces from the grids. I'd read the instructions that said to spray before making your first waffle, and I found out that failing to do so is a big mistake! I haven't tried not using the spray since, but I think it wouldn't be a disaster to not spray since the grids have some oil on them from previous use. Don't forget the first time, though.
I was disappointed to see that the design makes no provision for cord storage, but I've put a rubber band around the plug a few turns and use that to secure the cord when storing the iron upright.
In case you want to use two wafflers simultaneously to supply your hungries, Alton Brown, in the aforementioned very amusing Youtube piece on waffles mentioned that with the Uno Classic mentioned above, if you run two consecutive irons you likely would overload a single circuit because double irons would draw more than the 15 amps that most circuit breakers tolerate. Thus, he counsels, you would have to use two separate circuits. This would not be true of the 26500, because it draws 650 watts.
Edit (8.11.2010): I've had this since May 2010 and made at least one waffle a day ever since. That's over 80 waffles (usually one each morning, sometimes two). I've noticed the last few weeks that the waffles come out considerably darker from the front (opening end) of the waffle iron. If that trend continues, it may be not usable. Don't know why it would do this or what I could do to alleviate it other than to petition a warranty replacement. Meantime, I'm eating a waffle (or two) for breakfast daily (using the sourdough recipe above in this review).
