The Herb Savor really does a fantastic job preserving fresh herbs in the fridge. As a caveat, I have a commercial fridge & everything seems to keep longer in it than in a regular residental fridge. To get an accurate comparison, I did a side-by-side test in the fridge using a glass of water, a sealed plastic bag, and the Herb Savor, using fresh flatleaf parsley. The parsley in the plastic bag and the glass of water each lasted for about 10 days (longer than I expected, frankly); the parsley in the Herb Savor was still dark green, crisp & flavorful A MONTH LATER. Dude. I don't know how long it would have held out because I needed it for a recipe. (And I admit that I completely forgot to refill it, so that month of life happened without any additional water beyond the first fill-up.)
Now, flatleaf parsley isn't the most perishable of herbs (I'll test it next with cilantro, which almost always goes south before I have a chance to finish a bu nch).
The unit is basically a perforated metal tray with a plastic case that forms an upright cage that rests in the water reservoir. The reservior has a plug that allows it to be refilled without removing it from the shelf. The reservoir is weighted, and I had no issues with it tipping, even on the widely-spaced wire shelves of my commercial fridge.
It's attractive, nicely weighted, easy to clean, and the exact size of those little pods of herbs you get at the grocery store.
My only complaint is that it's too small for herbs that come in larger bunches, like cilantro, or herbs you might get from the farmer's market or CSA. If you only use the grocery store pods, it's genius & definitely a 5-star product.
Added: recently tossed some completely ragged, wilted mint in the Herb Savor & it perked it right back up the next day--crisp and bright. I had almost thrown it out, but I'm glad I gave the herb savor a try first.
