I have a Porkert meat grinder that looks very similar to this one. Actually, they all look about the same. My grinder works very well and makes perfect ground beef, with lean or fatty blends. Just thought I'd leave some advice for the people who are having so much trouble with their grinders. Assuming that the screw, knife and cutting die on these other models are put together as well as my Porkert 8 (a grinder from the Czech Republic), these other grinders should also be able to work well. Here are a few tips to make a grinder work.
1. Everything must be ice-cold. Put the whole grinder in the freezer a few hours before grinding. Also, put the meat in the freezer and space out the pieces on a tray or plate so that they chill evenly. The meat should be ALMOST frozen. Start grinding immediately as soon as you remove it from the freezer. Test out your set up in advance so you can start quickly.
2. Cut the meat into long STRIPS, NOT CHUNKS. Strips of meat feed with little effort. Leave buttery, waxy fat on the meat (it feeds through just fine as long as it's well-chilled), but make sure you trim off sinew and elastic textured connective tissue. It will gum up the grinder.
3. Make sure the blades of the cutter face the die plate (the plate with the holes). If the blades are very dull, you can sharpen them with a file, like you would use to sharpen a lawn mower blade. If you don't know how to do this, check out a video on you tube. Files are available on amazon and most hardware stores. Really easy.
4. If the counter is too thick for the grinder to clamp onto it. Get a couple of C - clamps from the hardware store and use them to clamp a thinner cutting board to your counter. Leave a little overhang and clamp the grinder to that.
5. When finished, feed a slice of cheap sandwich bread through the grinder (not too many or it will gum up), then take it apart and clean it with hot water. No problem. Oil any parts that aren't protected by shiny tin. Use vegetable oil.
