When I started my search for the perfect baker, I was initially looking for a certain size, and I searched for a long time before finding this item. It's not only the size I needed, but by far the very best baker I've purchased. It's not too thick or thin, so it bakes evenly, without over or under cooking, the sides are neither too shallow nor too high, so it can be used for anything from pies to quiches to flan to tarts. I have many round bakers, but all others are too deep, too thick, too thin, too large or too small; this one is perfectly sized and perfectly made, the porcelain is beautiful and easy to clean; I could not be happier with this find. It's also an excellent price for a very fine, useful piece of porcelain cookware.

The walls of these dishes, as in all Pillivuyt items, are exceptionally even and not too thick, so the heat conduction is even and efficient. This creates an evenly cooked and browned crust that will slide easily out of the pan when you are ready to serve it. You can cut your tart in the pan without worrying about scratching the glaze and the dish will clean up without scrubbing or scraping. Pillivuyt porcelain is fired at 2500 degrees Fahrenheit, so you can safely put any dish under the broiler for that finishing touch and final browning. The 11 3/4 inch tart pan is deeper than the standard pan and will hold larger recipes for quiche or baked egg dishes or deep dish pizzas. It also is a lovely presentation pieces for hot or cold hors d'oeuvres.
