I have several tart recipes and wanted a nice dish to present the desserts in. I purchased this and am happy with the quality and its performance, however I think it is a bit overpriced.
Description of Pillivuyt Porcelain 10-Inch Fluted Tart/Flan BakerPillivuyt excels in making the classic French cooking tools and the tart pans are a fine example of this. With graceful fluted edges and a brilliant impermeable glaze, these are dishes you can bring to the table and present your creations directly to your guests or family. The walls of these dishes, as in all Pillivuyt items, are exceptionally even and not too thick, so the heat conduction is even and efficient. This creates an evenly cooked and browned crust that will slide easily out of the pan when you are ready to serve it. You can cut your tart in the pan without worrying about scratching the glaze and the dish will clean up without scrubbing or scraping. Pillivuyt porcelain is fired at 2500 degrees Fahrenheit, so you can safely put any dish under the broiler for that finishing touch and final browning. The 10-inch tart pan is slightly larger than the standard size and a good choice for quiches and other recipes of needing more volume. With its thin, fluted 1-1/4-inch edges, this large 10-inch round tart dish with the ideal heat conduction for a nicely browned crust and firm center bakes and serves a party-sized classic caramel flan or a light quiche to a crowd of luncheon guests.
