Customer Review: Avoiding Problems with the Rose Bundt Pan

Regarding the problems some reviewers have experienced with cakes sticking to the pan two things are usually at fault -- proper preparation of the pan before baking, and not allowing time for the cake to rest upright in the pan on a cooling rack after removing it from the oven. Unmolding the pan is the best part, so we all are anxious to see the end result, but if the cake isn't allowed to rest for 10-15 minutes, it may stick and/or fall apart. It is too hot and fragile to hold completely together, so wait to unmold, at least 10 but no more than 15 minutes.
I think the "non-stick" surface of the bundt pan is a bit of a misnomer. The surface still needs to be completely, liberally covered with grease and flour. Because of all the nooks and crannies, I don't have the patience to hand oil or use a pastry brush. I simply use a cooking spray with oil and flour combined, like Baker's Joy, and have never had a cake stick. Liberally spray the entire inside of the pan and then turn the pan upside down over paper towels to drain while preparing the batter. If the cake sticks, soak it in hot water to remove the remants. Scouring pads will remove the finish.
What vexes me are bubbles in the batter which if not released from the pan before baking can leave gaps in the pan's design. So, although a normal cake mix will always work in the pan, what produces the best result is a pound cake style cake for the finest crumb. There are many recipes found on the internet for bundt cakes and adaptations of cake mixes for the pans. Pour the batter slowly to avoid creating new bubbles and give the pan a firm wack or two on the counter to help the bubbles rise to the surface.
I love these pans and use them all the time with only the bubble problem as a minor glitch. There is nothing quite as spectacular as setting a brunch or shower table with three floral cakes -- the rose, sunflower and chrysanthemum pan.
