To start off, honesty requires that I let you know that I won my SoyQuick in a contest. That said, it has been on my Amazon Wish List for quite a while.
I love this machine. Really, truly love it. The convenience and ease of use, not to mention ease of clean-up make it a winner in my book.
I have the previous edition and while I loved the soymilk that I was making, clean-up was a time consuming chore. The clean-up on the SoyQuick Premier Milk Maker 930P is much quicker but still takes a bit of effort. After all, we're dealing with cooked on soybean mush. It probably takes me about 10 minutes to clean the new machine compared to more than 30 minutes with the previous model. Even after spending all that time cleaning it, I was never sure that I had gotten all of the cooked soybeans out of the screen mesh in the filter cup. With the new machine, I know, without a doubt, that I have gotten every bit of the cooked soybeans.
I played around with the recipe until I have one that I like:
2 1/2 cups soaked soybeans with *all* of the skins removed
3 tablespoons rolled oats (I use thick rolled oats)
1/2 vanilla bean
Water to the "max fill" line
Once the machine has let me know that the soymilk is done, I let is set for a bit--generally about 30 minutes. Then I remove the motor/grinder and place it into a pot/bowl of hot water to keep it moist while I strain the milk.
I pour the soymilk through the provided mesh strainer into the provided "transfer pitcher." Once I have strained it once, I strain it again through a "gold" coffee filter. Straining the milk twice removes the residue that can linger at the bottom of the storage container, whatever it is.
Add to the soymilk:
Vanilla bean seeds from the 1/2 bean above
2 to 3 tablespoons sugar
1 pinch kosher salt
1 pinch vitamin C powder (aka ascorbic acid)
Mix well and then pour into storage container of your choice.
Yes, straining the soymilk removes a lot of the vanilla bean seeds from the finished product. To that end, I've started splitting the vanilla bean before I add it to the pot and scrap as much of the seeds into my mixing bowl along with the sugar, salt and vitamin C that use in to finish the milk. This way, the majority of the vanilla bean seeds end up in the finished product. For a stronger vanilla flavor, use a full bean.
The okara can be used for a variety of things. Including the vanilla bean in the cooking process limits the uses but that's okay for me. I tend to use a bit in a batch of pancakes immediately, along with whatever milk won't fit into my liter glass pitcher. The vanilla bean does need to be picked out as it doesn't grind up very well and ends up in ugly looking pieces.
Using the soymilk maker is about as easy as it can be. Dump the ingredients, plug in and press the button appropriate for the type milk being made.
The negative, and there are only two as far as I am concerned:
1: The transfer pitcher is plastic.
2: The SoyQuick Premier Milk Maker 930P is made in China.
While I am not thrilled about using the plastic "transfer" pitcher, I am using it until I can find something "better" for me.
I have a couple more recipes that I want to try but haven't had the opportunity. One uses cocoa nibs and, of course, I still want to try almonds, as well as rice and hazelnuts to make milk.
Removing the soybean skins:
A couple of Web sites and cook book authors recommend removing the skins from the soybeans for a cleaner tasting soymilk. I agree. The problem is that these folks are misleading when they say that it only takes a couple of minutes to remove the skins--generally by rubbing the beans under running water. I have found that it can take about an hour to painstakingly remove each skin. This is an hour of meditation for me that can be broken up with my regular weekend cooking chores.
