I received this tool as a birthday gift. Let me first say by no means am I a cooking/knife expert, I am just a regular guy who likes to cook and has a couple decent knives (globals'). Now I know there are a lot of thoughts on the subject of knife sharpening and the devices/tools one should use. I have done a good amount of research on the subject and came up with this basic rough conclusion. To get your knives in good working condition for the basic cook you need to preform three steps. 1. Sharpen (this can be done many ways) this should be done when your knives are dull or dulling 2. Honing (This should be done with a steel/ceramic) this should be done before each use to align the blade 3.Stropping (this should be done with a decent strop) after sharpening and honing to take the burrs off the knifes edge. O.K. now for the down and dirty you can research all of these things because there are numerous ways and devices to perform each of these tasks. Since I am still building my "tool chest" one piece at a time I am doing things down and dirty. I will upgrade as I can.1. I sharpen with the Yoshikin 220/GB MinoSharp Water Sharpener it does the job, I am just careful not to put to much pressure on the knife 2. I Hone with an old steel that needs to be upgraded..once again I am very gentle with it. 3. I Strop with an old heavy rag..I know its not ideal and I will buy a proper strop but folded up and running the knife over it does seem to help. This down and dirty process has definitely put the bite back into my knives.Are they sharp as they can be ? probably not..are they sharp enough for what I use the for with the time/energy/money expended definitely..
Description of MinoSharp 220/GB Ceramic Wheel Water Sharpener, Grey/Black
This sharpener can be used on Global knives except serrated knives and those with a traditional Japanese edge.Recommended for sharpening Global knives but not necessarily those from other manufacturers, this device employs two ceramic wheels--one coarse, the other fine--to return a dull knife to working order. Using the sharpener is simple and easy. Fill the wheels' compartment with water so your blade is continuously washed while it's being sharpened. Then draw a knife seven or eight times through the coarse (white) wheel. Then draw your blade seven or eight times through the fine (pink) wheel to bring it back to life. The sharpener's plastic handle is shaped so it can be gripped firmly and safely and has a soft, rubber-like insert for comfort. --Fred Brack
